Lunch is served 🍽️✨
A couple weeks ago I had the pleasure of cooking lunch for an open house in Aspen, serving 40 guests under the summer sun.

On the menu:
🥩 Grilled hanger steak with chimichurri
🐟 Dill & Dijon roasted salmon
🌿 Blistered green beans with tahini drizzle
🥗 Roasted vegetable + farro salad with boiled halloumi
🍋 Arugula salad with lemon vinaigrette
🍑 Grilled nectarines with lemon ricotta
🍅 Heirloom tomato caprese

Every plate was filled with color, flavor, and the best of the season.

So many request for my ramen recipe, I LOVE IT ❤️

This was by far one of my faves

My Insta pot ramen recipe

Ingredients:
• 2 lb pork butt ( omit if vegetarian )
• 2 tbsp coconut oil or olive oil
• 6 cups bone broth ( kettle & fire or homemade is my fave )
• 2 cups shiitake mushrooms, sliced
• 3 bok choy, chopped bite size pieces
• 1/4 cup sake or mirin
• 1 tbsp fish sauce
• 1/2 cup soy sauce or tamari
• 1 tbsp chili garlic sauce
• 1/2 cups brown or coconut sugar
• 4 pack ramen noodles or gf rice noodles
• 6 soft boiled eggs ( boil 7 minutes then, peel, soak in 1/4 cup soy sauce + 1/4 cup mirin ) ~ best made ahead of time
• 1 cup green onions
• 2 limes
• 1 bunch cilantro
• sesame seeds

Directions:

1. Add the cooking oil to the Instant Pot and brown the pork on all sides right in the Instant Pot, about 6 minutes per side.
2. Add the chicken broth, sake and dashi powder. Use the pressure cooker setting (high) to cook for 45 minutes. Use the quick release to release the pressure. Let the pressure release naturally for 15 minutes, then use quick release to release any remaining pressure.
3. Remove the pork from the broth and break into pieces on a lined baking sheet. Cut into bite size pieces on cutting board or pull apart with 2 forks
4. Sprinkle the shredded pork with 1/4 cup soy sauce & sugar. Mix well and broil in oven for 5-10 minutes till crispy and delicious
5. Add fish sauce, chili, remaining soy sauce, and mirin to instant pot liquid that is left over
6. Set instant pot to sauté and bring liquid to a boil. Then add in your mushrooms & bok choy
7. While the broth simmers, cook the dried ramen noodles in boiling water according to package directions. Drain.
8. Place the noodles in bowl and cover with broth & veggies
9. Add braised pork belly, caramelized pork pieces, green onions, 1-2 ramen eggs (halved), cilantro, fresh lime juice, and sesame seed garnishes, if desired.
