Let’s take a minute to talk about resistant starch. There are 3 types. Type 1 is found in grains, seeds and legumes and resists digestion because it is bound within fibrous cell walls. Type 2 is found in some starchy foods including raw potatoes and green bananas. Type 3 is formed when certain starchy foods are cooked and cooled, including sweet potatoes and rice. The cooling turns some of the digestible starches into resistant starches via retrogradation. The reason why resistant starch works is because it functions like soluble, fermentable fiber. This goes through the upper G.I. tract undigested and when it reaches your colon it feeds your friendly gut bacteria!
