If you are healthy and can move your body, do it! Even if it’s a quick 15 min workout, or a quick run, or jumping rope to your favorite song.. do it. We are so blessed to be able to move our bodies and be healthy, never take it for granted!

As I slowly recover and become stronger, I’ve learned to appreciate my body even more than before. I remember when I used to run 10-16 miles every Saturday, just for fun and it seemed like nothing.. today I can barely get 3 miles or just 2 if I go a bit faster, but I’m ok with that, still grateful that I can RUN and feel good.

Go move your body today. The only workout that I ever regret, is the one that I didn’t do 💪🏻🏃🏻‍♀️ ✨

Almost 6 months postpartum run 😅! Over the past 2 months I’ve been going to physical therapy to strengthen my core and pelvic floor. It’s so crazy that moms only get ONE check-up after 6 weeks pp and that’s it, but it really takes months to recover! I’m still recovering.

Yesterday during the run I felt great, physically and mentally, it felt so good to regain that mental strength that I didn’t even realize I had lost.. it’s really what pushed me to keep going to complete the 3 miles. I didn’t care about the pace or the time, I was just enjoying the run without feeling much pain or discomfort… it was amazing. The bad news is that a few hours after the run I felt physically weak, my pelvic floor muscles and core still need to recover.. and even though this makes me upset, I’ll continue to work towards a full recovery through therapy and consistent workouts. All of this to say - Mamas, and moms to be.. find a pelvic floor therapist, and take care of yourself pp, don’t believe the lie that you are fully recovered after 6 pp, sadly it’s up to us to find ways to recover, even with the crazy life after having a baby, find that time for yourself to regain your strength, and do what you love ❤️

3 mile run at 8 weeks postpartum.

I would be lying if I said it wasn’t hard 😓 I wanted to quit after 2 miles (but I got lost 🤪) and ended running 3 miles!! I’m still not close to my avg. pace/mile pre-pregnancy but I know I’ll get there little by little 💪🏻👟

As a new mom my time is very limited so I’m all about making quick, easy, healthy and delicious meals like this shrimp salad 🥗 🍤. Took me about 15 mins to prep everything and it was so good and filling! It had greens, quinoa, cucumber, carrots, artichoke hearts, tomatoes and shrimp with a lemon dressing and olive oil!

I’m extra blessed and lucky to have my mom with me during the fourth trimester , she helps me with everything but specially with making sure I eat 🥰. She made the shrimp and I prepared the salad, let me know in the comments if you want her shrimp recipe, it’s sooooo good 😋 💛

I waited for this day for a long time!! My last run was on Sept 8th of last year, I was 5 months preggo and it has felt like forever since then. Today I finally ran again, and wow these two miles were challenging but I feel great! Just one month postpartum and I feel ready to get back to my active lifestyle that I’ve missed so much!!

I’m saving the second picture to look back in a few months and see how much I’ve improved 🤞🏻💪🏻

Homemade Minestrone Soup 🥣⁣

It feels like 34 degrees today and that calls for a warm comforting soup 😋. Took me about 15 mins to prep and 10 mins to cook. Here is the recipe 📝:⁣

- On a pan sauté diced 1/4 of an onion, 4 celery stacks, and 1 bell pepper (normally I use carrots but I didn’t have any)⁣
- After about 5 mins, add 1 liter of veggie broth and a can of diced tomato blended, I also added 1.5 cups of additional water and a pinch of salt⁣

- Add pasta and boil until cooked, then add the cannelloni beans (precooked) and your kale at the very end.⁣

- Serve with lime juice and bread if you want a little crunch. Hope you enjoy it! 🤤⁣

Quick, Nutritious and Delicious Lunch

Many of us are working from home which is great because we can prep lunch on demand instead of meal prepping as before. Today’s lunch consisted of baked carrots and zucchini, steamed broccoli and baked Salmon 😋.

The best part was that it only took about 10 mins to prep everything and 20-30 mins to bake, which makes it perfect for our busy schedules. I added S&P and Italian Seasoning to the veggies with a bit of avocado oil, and baked for ~30 mins at 400F. The salmon was seasoned with paprika, garlic, salt, parsley, lemon pepper and vegan butter baker at 400F for 20 mins, and the broccoli had only S&P.

Cauliflower Vegan Curry 😋🥘⁣

This is one of my all time favorite recipes, I love the process of chopping all the ingredients, prepping the spices and cooking it. It takes about 30 mins to make and it’s so delicious, check recipe below👇🏻⁣

- Chop 2 shallots, 1 serrano (optional), 3 in. ginger, and 2 garlic cloves ⁣

- 2 cups of cauliflower in small pieces ⁣

- 2 yellow potatoes in small cubes⁣

- Rinse 1 can of organic chickpeas⁣

- Add avo oil into a pan, and add the garlic, ginger, shallot and serrano⁣

- Then add 1 can of coconut milk, and 3-4 tsp of thai red curry ⁣

- Add 1 tbsp of turmeric, 1 tbs of maple syrup, 2 tbsps of soy sauce, & 1 tbsp of nutritional yeast ... mix everything and let it simmer on low medium heat. ⁣

-Then add the cauliflower, the potatoes, and the chickpeas and cook on low heat for about 15-20 mins⁣

- Adjust any of the spices for flavor, serve with a bed of rice and top with cilantro. ⁣

Happy, Healthy, and Pregnant!! 🤰🏻❤️

If you noticed I didn’t share much over the last few months, well this is why! I’ve been making a baby lol! It’s been super exciting and rough too. I had horrible morning (more like all day) sickness, I could barely keep anything down, and having a trash can or a bag next to me at all times became my new thing. I lost weight and had low energy levels... it wasn’t fun!! I’ve slowly started to feeling better over the last few weeks and hopefully I can start sharing more of my new journey 😄🤩!

I’ll be sharing more of what I’m eating and the good, bad, and ugly about my pregnancy experience because I believe IG needs more of that 🙌🏻.

Mint tea from my indoor herb garden 🍃⁣

Are you a tea/coffee drinker? I love both but I always drink teas when I feel stressed or anxious, they help me relax and forget about everything while I drink it. ⁣

Did you know that mint has been found to aid in performance for complex tasks and help ease mental fatigue (we all need help with this).⁣

Mint also has antibacterial and antiviral properties, helping to support your body’s immune system. Of course it won’t make you immune against corona or other viruses but it will definitely help you stay healthy. ⁣

It also helps relieving headaches and stomachaches, so next time you feel anxious, mentally tired, or sick.. drink a cup of tea ☕️ 💚⁣

Tofu Scramble 😋🥑⁣

Do you like tofu?? ⁣
When I first became vegetarian about 6 years ago, it took me about a year to try tofu. I thought it was tasteless and I wasn’t a fan of the texture but now I love it!! ⁣

I think the key is knowing how to cook it, it is a super versatile food and it’s also an excellent source of plant based proteins. It’s a nutrient dense food and low in calories.⁣

On these slow quarantine weekends, I’ve been making tofu scramble and I’m loving it. For taste I use my spice mix: paprika, salt, pepper, coriander, and turmeric. I sauté onions, one bell pepper, and 1 serrano or jalapeño. Then I add the tofu, smash and scramble and then I serve with baked potatoes and avocado.
