Chicken Bacon Ranch Casserole
Ingredients
1 1/2 pounds chicken breasts boneless, skinless
8 slices bacon cooked and chopped
5 cups broccoli florets
1 1/2 cup cheddar cheese shredded
1 cup mozzarella cheese shredded
1 cup ranch dressing or homemade keto ranch dressing
3 tbsp ranch dressing mix optional
Instructions
Cook Bacon and Steam Broccoli- Fry or bake the bacon in the oven until crispy. Meanwhile, blanch the broccoli in boiling water for about 2-3 minutes. Crumble the bacon into small pieces.
Prepare the chicken- Cut the chicken breasts into bite-sized pieces and pan-sear for 5-6 minutes over medium-high heat. You can also use leftover shredded rotisserie chicken breast.
Preheat the oven to 375 F degrees/ 190 C Celsius and grease a 9x13-inch glass casserole baking dish.
Assemble - Combine cooked chicken, bacon bits, broccoli, ranch dressing, 1 cup cheddar cheese, and mozzarella in a large bowl. Toss together until well incorporated. Mix in about 3 tablespoons of ranch seasoning for extra ranch flavor.
Transfer the chicken mixture to the prepared casserole dish, and top with the remaining cheddar cheese and bacon.
Bake for 20-25 minutes in the preheated oven, or until the cheese is melty and the chicken casserole looks golden brown on top.
Garnish with fresh parsley and bacon bits.

Homemade Ranch Dressing with Crispy Bacon
Serving Size: 12
Ingredients:
Dressing
- 1/2 cup, fluid Heavy Whipping Cream
- 1 cup Sour Cream
- 1 cup Mayonnaise
- 1 tbsp Lemon juice
- 24 strip, cooked Bacon
- 4 tbsp Ranch Seasoning
Veggies
- 4 cup, sliced or chopped Cucumber
- 4 cup chopped Celery
- 4 cup cherry tomatoes Cherry/Grape Tomatoes
Directions:
1. Preheat the oven to 400°F and line a baking dish with parchment paper.
2. Add bacon and bake in the oven for 5-7 minutes or until golden brown and crispy.
3. Remove bacon from oven and chop into bite size pieces.
4. Wash and slice vegetables.
5. In a bowl, mix together heavy cream, sour cream, lemon juice and ranch seasoning.
6. Mix in bacon bites.
7. Adjust ranch seasoning to taste.
8. Serve dressing with sliced vegetables.

This combination of tender beef and fresh salad, along with a flavourful mustard dressing is the perfect summer dinner.
Beef Salad with Mozzarella and Tomato
Serving Size: 4
Ingredients:
Salad
-12 oz Sirloin Steak
- 4 cup Mixed Greens
- 1 cup cherry tomatoes Cherry/Grape Tomatoes
- 8 oz Mozzarella Cheese
- Salt to taste
- Black Pepper to taste
- 1 clove, minced Garlic
- 2 tbsp Butter
Dressing
- 1/2 cup Olive Oil
- 1 clove, minced Garlic
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Dijon Mustard
- 1 tbsp, chopped Basil
- 2 tbsp Parsley, fresh
- Salt and Pepper to taste
Directions:
Dressing
1. In a small bowl, combine all dressing ingredients and mix well.
2. Refrigerate until ready to use.
Steak
1. Season steak with salt and pepper.
2. Cut seasoned steak to 1 inch thick slices.
3. Place a pan over medium-high heat and melt butter.
4. Add steak slices and minced garlic to melted butter.
5. Sear meat for 3-4 minutes per side.
6. In a serving plate, add mixed greens, cherry tomatoes, and chopped mozzarella.
7. Add steak on top and drizzle with prepared dressing.

Nothing says comfort food like some keto-friendly mac & cheese 🧀
Ingredients:
FOR THE MAC & CHEESE
Butter, for baking dish
2 medium heads cauliflower, cut into florets
2 tbsp. extra-virgin olive oil
Kosher salt
1 c. heavy cream
6 oz. cream cheese, cut into cubes
4 c. shredded cheddar
2 c. shredded mozzarella
1 tbsp. hot sauce (optional)
Freshly ground black pepper
FOR THE TOPPING
4 oz. pork rinds, crushed
1/4 c. freshly grated Parmesan
1 tbsp. extra-virgin olive oil
2 tbsp. freshly chopped parsley, for garnish
Steps:
1. Preheat oven to 375° and butter a 9”-x-13” baking dish. In a large bowl, toss cauliflower with 2 tablespoons oil and season with salt. Spread cauliflower onto two large baking sheets and roast until tender and lightly golden, about 40 minutes.
2. Meanwhile, in a large pot over medium heat, heat cream. Bring up to a simmer, then decrease heat to low and stir in cheeses until melted. Remove from heat, add hot sauce if using and season with salt and pepper, then fold in roasted cauliflower. Taste and season more if needed.
3. Transfer mixture to prepared baking dish. In a medium bowl stir to combine pork rinds, Parmesan, and oil. Sprinkle mixture in an even layer over cauliflower and cheese.
4. Bake until golden, 15 minutes. If desired, turn oven to broil to toast topping further, about 2 minutes.
5. Garnish with parsley before serving.

Chicken & Bacon Club Sandwich 🍅🥓🥬
INGREDIENTS
6 Lettuce Leaves (Iceberg)
6 oz Chicken Breast (cooked)
4 Slices of Bacon
4 oz Deli Ham
2 Slices Cheese
4 Slices Tomatoes
2 Tbsp Mayonaise
DIRECTIONS
1. Cook the bacon and warm up the cooked chicken. Then cut the 6 large lettuce leaves into square(ish) shapes.
2. Lay 2 lettuce leaves onto a plate and spread 1/2 of the mayonnaise onto it. Next lay the ham, chicken and cheese on top. Cover the meat with another 2 lettuce leaves and spread the other 1/2 of the mayonnaise on top of them.
3. Place the tomato slices and bacon on top of that. Cover with the last two lettuce slices, then poke 4 tooth picks or skewers into the middle of each of the corners. Slice the sandwich into 4, by slicing corner to corner.
This recipe makes 2 servings or 4 small sandwiches. 1 Serving = 1/2 of the Recipe

Keto Cheese Biscuits
These cheese biscuits use almond flour which is a popular low carb flour, so it's definitely keto-approved.
