After a year-long NOAA-funded research project, we’ve uncovered some surprising—and concerning—trends in U.S. oyster production, pricing, imports, and demand. From rising input costs to a flood of foreign imports, and flat farmgate prices while restaurant prices soar... the squeeze on growers is real.
💡 Want to know what this means for small farms, and where the industry might be headed?
This is must-read insight for growers, dealers, and anyone invested in the future of shellfish farming.

Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes.
In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. Bring to a boil; cook and stir until thickened, 1-2 minutes.
Stir in clams and remaining half-and-half; heat through (do not boil). Crumble the cooked bacon; sprinkle over each serving.
Clam Chowder Tips
What is New England clam chowder?
New England clam chowder normally contains clams, potatoes, onions, salted pork and milk or cream. The addition of dairy is considered the biggest difference from other chowders. New England clam chowder is a classic American staple, first eaten by settlers as early as the 1700s. Be sure to check out our other wickedly good New England recipes!
What toppings can I add to clam chowder?
Classic clam chowder toppings are oyster crackers, chopped cooked bacon and fresh chives.
How do you thicken clam chowder?
This clam chowder is thickened with a slurry, a mixture of fat-free half-and-half and flour. By mixing these two together, you will prevent clumping. Cook the soup until it has thickened, and the taste of flour will be cooked out. Follow these additional soup thickening tips!

When plucked from their shells, clams might not win any beauty contests, but their briny bite and bouncy chew create a covetable combination that works in a wide variety of dishes in cuisines around the world. On top of that, not one single type of clam widely available in the US lands in the Monterey Bay Aquarium Seafood Watch’s red "avoid" category of sustainability, which means that you can enjoy your pasta alla vongole or clams casino with a clear conscience. As filter feeders, clams even help clean up their environment, clearing out any toxins from the water as they bubble about in tidal flats and dig deep into beaches with their powerful muscles.

Clam is a common name for several kinds of bivalve molluscs. The word is often applied only to those that are edible and live as infauna, spending most of their lives halfway buried in the sand of the seafloor or riverbeds.

Oyster seeds
Seed oysters are small oysters, about 2–25 mm long, provided primarily to oyster growers for the half-shell market. ... Fertilized eggs become microscopic oyster larvae, which swim freely for about two weeks before metamorphosing, or changing, into oyster "spat," or juvenile oysters.

so a lot of my co-workers and friends are asking me about Pearls in Oysters so I will post some info about that as well as Oyster Seeds.

A natural pearl (often called an Oriental pearl) forms when an irritant works its way into a particular species of oyster, mussel, or clam. As a defense mechanism, the mollusk secretes a fluid to coat the irritant. Layer upon layer of this coating is deposited on the irritant until a lustrous pearl is formed.
