Congratulations to the Township slate that swept the election: Clare Marie Keenan as Supervisor, Greg White as Clerk, Ali El Safar as Assessor, Ade Onayemi, Tim Thomas, Margie Trybus & Eric Davis as Trustees. May you serve the community with both head and heart.

Supporting our local cab companies and getting seniors and those with disabilities to their polling place - thank you Oak Park Township!

Taxi Coupons available for election day!

Oak Park Township will be closed on election day, Tuesday, April 6th, so that our spaces on Oak Park Avenue may be used as polling places, while taking precautions to prevent the spread of COVID-19 . Senior transportation will not be operating that day; however, if you are or know a senior or a person with a disability who needs a ride to the polls for the local election on election day, you may utilize OPT Taxi Coupons to get to the polls. Please call 708-383-8005 for details, and remember, you will need to get them prior to election day to use them on election day.

Applications are now open for the Cook County Emergency Rental Assistance program. It pays up to 12 months of missed rent and utilities payments and up to 3 months of future rent payments. Payments will be made directly to your landlord and utility company.

I started sharing soup with a few more isolated friends last spring... now I make triple batches.

The most popular soup has been Caldo Verde:
- 1/2 lb of Kale shredded (can substitute collard greens or cabbage)
- 4oz of sliced liguica (can substitute kielbasa)
- 3 med. potatoes, boiled, mashed & returned to water
- 6 cups of water
-2 teasp. salt
- 1/2 cup olive oil
- 1/4 teasp. pepper
1 (16oz.) can of red beans and/or tomatoes, optional

Simmer sausage w/ the potatoes. Remove sausage & potatoes; mash potatoes and return to water. Stir in olive oil, salt & pepper. Add kale and cook uncovered for 10 min. Return sausage to soup.

Each recipe comes with a story - I found this recipe in a cookbook from the Taste of the Chapman (Glens Falls, NY historical society) that my dad gave his wife in ‘92. Phyllis Marvin of Queensbury contributed the recipe with a note: “delicious and expandable” so it seemed perfect for the Soup Fairy.
