There are several foods that have incredible benefits towards your body’s natural fight against common colds/flus etc, and during the cold winter months, it’s the perfect time to prepare adequately against whatever illnesses try to fight their way in. 
There are a few foods that are of utmost importance during cold and flu season.  These foods deliver important nutrients into our bodies that help fight off unwanted viruses and bacteria.  Here is a list of our 5 faves:
1. Broccoli – Packed full of immune boosting vitamins and minerals, the key to keeping this vegetable’s super vitamin powers intact is to eat it raw. This way it does not break down any of its composition.
2. Garlic – This infection-fighting weapon has been valued since the early civilizations of mankind for its immune supporting properties – plus, it is delicious! So, do not forget a healthy dose of this Rockstar root vegetable in your next meal.
3. Ginger – While an excellent substitute for pain relievers and nausea medication, this Japanese root vegetable also carries high levels of anti-inflammatory properties.
4. Turmeric – Filled with curcumin, an immune boosting property, this root vegetable is also antiviral. Taken daily, turmeric is said to ward off all illnesses.
5. Elderberries – Our favorite immune boosting food, the Elderberry plant boasts both berries and flowers that act as a full-service health provider to the body. Both the berries and the flowers are packed with antioxidants, vitamins, and minerals that guard your cells from infection. In addition to daily immune support, this plant also has anti-inflammatory properties, reduces stress hormones, relieves symptoms of constipation by cleaning the bowel walls and creating movement, fights off respiratory illness, supports kidney function, and lessens headaches.

Tis the season…. Here’s my favorite recipe for marshmallows:
1/4 cup of grass fed beef gelatin
1 cup of water (split in half)
1 cup honey
1 tsp vanilla (or any other flavor you fancy)
Mix 1/2 cup of water and the gelatin in a stand mixer.
After it is incorporated, let sit while you prepare the sweetener. In a medium saucepan, bring the remaining 1/2 cup of water, honey, and vanilla to boil.
Once you have reached rolling boil, allow it to boil for about eight minutes. If you are a candy thermometer person you need to reach 240 degrees F. I do not break the thermometer out for this recipe and just go for the 8 minute mark. After eight minutes, you want to immediately pour the honey mixture into the mixture with gelatin. Your gelatin will be hard, so slowly incorporate the hot mixture.
Once it incorporates, turn your mixer on high and watch your marshmallows form.
Mix on high for about 12 minutes. When finished, you will have a marshmallow cream. This is wonderful with hot cocoa or by itself. Put remaining marshmallows in a pan lined with greased parchment paper.
I use coconut oil for this. Allow to harden for a few hours, then store in an airtight container. (Cut with a knife buttered or with coconut oil, or just store in clumps like me:) Do not refrigerate.

Pumpkin is incredibly rich in vitamin A and also provides nutrients such as vitamin C, potassium, riboflavin, copper, and manganese. Finding a way to put it on the menu is awesome. Transforming it into a delicious dessert is an added bonus!
Pumpkin Roll recipe:
3 eggs
3/4 cup maple syrup
2/3 cup pumpkin
3/4 cup flour
1 tsp baking soda
1 tsp cinnamon
dash sea salt
8 oz. cream cheese
2 tbs softened butter
1/2 tbs vanilla
1/4 cup or less of maple syrup
Use organic ingredients when possible
Preheat oven to 350°. Line a cookie sheet with wax paper. Grease and flour wax paper. Mix all top ingredients and spread in a rectangle on prepared wax paper.
Bake for 8 to 10 minutes, watching closely to ensure ends don’t burn. It usually takes my oven 12 minutes, but all ovens are different so watch closely to not burn. When cake is done, let it cool for a minute and carefully roll it while still on wax paper. (it will be hot) While it cools prepare your icing.
I use my countertop mixer for icing, you could certainly use a hand held as well. Mix all ingredients until creamy. Unroll cooled cake carefully. (If you have cracks it will still roll back up:) Spread icing evenly over cake and roll back up.

A fall staple! 🍎🍏
🍁Apple muffins:
3/4 cup melted butter
3/4 cup maple syrup (or more to taste)
1 tsp vanilla
1/2 cup milk (or coconut milk)
1/2 tsp salt
2 tsp baking soda
1 tsp cinnamon
2 cups whole wheat flour
2 eggs
2 apples chopped
🍁Use organic ingredients as much as possible
Preheat oven to 375. Cream the butter and maple syrup. Add eggs one at a time.Add milk and vanilla. Mix together flour, cinnamon, salt and baking soda. Combine dry ingredients to liquid ingredients.Peel and cut two apples and add to mixture.Pour into muffin pan lined with muffin liners. Bake for 30 to 35 minutes. Enjoy!

My go to pumpkin puree recipe:
3 small whole pumpkins
Preheat oven to 350. Quarter the pumpkins or, depending on the size, you may need to slice them down further. Scrape out the seeds and the stringy goo, leaving just the “meat” of the pumpkin. I use my tablespoon for this job, but you may find that another kitchen tool works better. Clean, dry and save your seeds to roast later! Place pumpkins slices on a cookie sheet and roast for an hour.Check with a fork to make sure they are cooked throughout after an hour. Using your tablespoon or other choice utensil, scrape meat out of cooked pumpkin pieces leaving only the skin behind. Place pumpkin in blender or food processor until you reach desired puree consistency.Once your pumpkin is blended, portion it out to ideal sizes for your favorite fall recipes, place in your storage container of choice, and freeze. There you have it – REAL pumpkin puree at our fingertips for use in all of your yummy pumpkin favorites!

As we approach that time of year again, here’s your reminder of why pumpkins being in season is something to look forward to…
We are so fortunate to have four diverse seasons of the year to enjoy, and, of all the seasons, fall is hands-down my favorite!
The trees show off with their vibrant colors, the morning air becomes cool and crisp, a familiar set of aromas returns, and the earth treats us with produce that we forgot we missed all year long.
An old favorite of mine is pumpkin! Sure, they’re fun for carving and decorating, but the delicious inside is the best part and often wasted. I love pumpkin pie, pumpkin smoothies, pumpkin pancakes, pumpkin anything and everything!
Using real pumpkin is not only healthier, but much more festive than grabbing a can of pumpkin puree from the grocery store (which, by the way, isn’t actually pumpkin in most cases). Unfortunately, we haven’t had great success with pumpkins in our garden – maybe it’s my not-so-green thumb or possibly the fact that my kids think a pumpkin sighting is the BEST THING ON EARTH and immediately pick them.
Either way, we rely on our CSA (Community Sustained Agriculture) for this fall gem. If that’s not an option, you can easily find them at most Farmer’s Markets throughout the fall.
