Made homemade rolls today to eat with soup tonight! And tomorrow! Very delicious and packed with flavor!

The Best Dinner Rolls

Ingredients
4 -5 cups all purpose flour
2 tablespoons rapid rise, instant yeast
⅓ cup granulated sugar
1 tsp salt
1½ cups warm milk , 110 degrees
5 tablespoons butter, softened
1 egg , room temperature
2 tablespoons melted butter

Instructions
Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.
Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary.
Increase speed to medium and beat for 2 minutes.
Add 1/2 cup flour and blend with the dough hook until incorporated. And another 1/2 cup flour and repeat, mixing at medium speed for another 2 minutes until a ball of dough is formed.
Add additional flour as necessary. The dough should be slightly sticky and soft and pulling away from the edge of the bowl.
Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise for 30 minutes at room temperature.
Remove the towel or plastic wrap and deflate the dough by punching down lightly.
Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

• I melted butter, herbs, garlic and grated Parmesan cheese that I put on top of the rolls prior to placing in oven.

• For rolls to be cooked I had to cook for about 30 minutes.

• I made them in my cast iron and feel they turned out better this time compared to last week!

For those who knew I have been on a journey to better health and ended up having to have surgery a year and half ago because my indigestion and extreme heart burn and acid reflux got so bad it was burning holes in my esophagus and stomach. So they removed 2/3 of my stomach that they said was the issue. Prior to said surgery I had lost 120lbs, since the surgery I lost another 100lbs. I went from taking 27 plus meds a day down to less than 5.
I went from size 4x clothes down to sizes 8-10 for pants and shirts. Size small to medium for dresses. Under garments went down to size 5 and 34DD (I was 48DD to DDD) And my shoes went from 11W to a 9. My weight started at 370, currently I am 145. I have reached my goals for sizes and for actual weight.

I am now on maintenance mode to maintain my achievements!

I just wanted to make this all known because if I could lose all that weight and get healthy so can you! If interested in knowing more on my journey comment below.

Dinner tonight.
My husband Travis saw a goulash type meal on Facebook. He said can I make something like it for his lunches this week, I make a meal that we can send a reheat of all week. He has a “lunch box” that plugs into cigarette lighter in the semi truck, we have a metal bowl that can be used in said device and I pack his main meal in the metal bowl for him to heat.

Anyhow here is the recipe I did for my goulash meal.

Ingredients:

2.5 lbs hamburger
1 small onion, 🧅 diced
9 mini bell peppers, 🫑 diced (3 of each red, orange and yellow)
8 mushrooms, 🍄‍🟫 diced
1 can olives, 🫒 sliced
3-6 Garlic, 🧄 minced (depends on how much you like garlic)
Seasonings 🌿 of choice. (I typically use Garlic powder, onion powder, oregano, Italian seasoning, marjoram, basil, thyme, 21 seasoning salute, herb de Provence.)
1 large can (28oz) diced tomatoes, reserve juice
2 small cans (15 oz) or 1 large can (28 oz) Italian seasoned diced tomatoes, reserve juice
1 large jar of Raos Spaghetti Sauce (flavor of choice)
1 small can (6oz) tomato paste
1 can (15oz) Whole Kernel Corn, 🌽 drained
1 box of pasta, your choice on which ones (I use either elbow or mini penne)

Directions:

Brown hamburger, add the onion, bell peppers and mushrooms. Simmer for a few minutes. Add the olives and corn. Simmer for a few more minutes. Add garlic, seasonings, diced tomatoes, Raos. Simmer on low for minimum 2 hrs to merge the flavors together. When noodles are almost finished cooking add tomato paste to sauce and continue to simmer sauce. Add sweetener of choice for sugar (we use swerve), to cut down the acidic of the sauce.

In a separate pot, boil water and noodles. Drain cooked noodles and add to pot of sauce. Mix up well and serve. Top with grated Parmesan.
