Black bean couscous salad: 3 cup couscous, 4 cup chicken stock, 1/2 cup 1 Tb olive oil, 1 Tb red wine vinegar, bell pepper, green onion, 2 cans black beans, 1 can garbanzo beans, 1 bag frozen corn 1 1/2 tsp cumin, salt and pepper, love
Serves a lot :) also good with parm and mozzarella cheese
Boil chicken stock. And couscouscous, cover, remove from heat. Let sit 5 minutes
In large bowl mix all other items.
Fluff couscous then combine with other ingredients.
