We eat with our noses!

What I’m talking about is the fact that most of what we perceive as flavor actually comes from smell, not taste.

Your tongue can only identify five basic taste:
Sweet 🍓
Salty 🧂
Sour 🍋‍🟩
Bitter 🥬
Umami 🍄‍🟫

everything else like the fruitiness, grassiness, floral notes, even nuttiness all comes from your Olfactory System.

To truly taste extra virgin olive oil you need to smell it first! The oil contains hundreds of volatile compounds that give its sensory profile— fresh cut grass, green tomato, artichoke, herbs, etc.

So remember to smell your oil before using it. Bonus points if you warm the glass you’re tasting it in. This will help express the aromas. 👃🏻

Today I want to show you a bright, no-cook snack using fresh mandarin oranges. 🍊🍊🍊

Even in the cold months, citrus is at its peak—juicy, fragrant, and naturally sweet. I’m cutting these into supremes, which just means removing the peel and pith so you’re left with clean, tender segments.

I arrange the tender segments on a plate—nothing fancy, just let the color shine.
add a few sprigs of fresh local dill.

The herbiness is clean and bright, and it plays beautifully with the citrus and olive oil—fresh, green, and unexpected.

Now here’s the key pairing: citrus with healthy fats. I drizzle a small amount of really good extra-virgin olive oil over the fruit.

The oil rounds out the acidity of the citrus and adds richness, while also helping your body absorb fat-soluble nutrients. It’s one of those combinations that tastes surprising but instantly makes sense. 🍊🫒😉
