I noticed something interesting about my 90-year-old mom the other day. 👵✨

She can walk down the street and back without getting too tired. She can touch her nose to her toes and even balance on one foot indefinitely! But when it comes to getting out of a chair or lifting a quart of milk? She struggles.

It’s not just "old age"—it’s a biological process called Motor Unit Remodeling. As we hit our 50s and beyond, we actually lose our "explosive" muscle fibers (the ones that help us stand up fast or catch our balance) 2-3x faster than our endurance fibers. If we don’t use them, our body literally converts them into slow-twitch fibers.

So many podcasters are talking about going carb-free, grain-free, and getting on the bandwagon of keto and paleo diets. This is part one of a series that I hope gives you some information on the importance of grains in our diets (of course depending on your own health conditions).
