I made this Sunday. I'll put the Lose it recipe at the bottom for all calories, fat, etc. Please share your great recipes too!
Megan's Redneck Seafood Gumbo
Ingredients:
4 ounces chopped up chicken thighs - baked or stir fried and diced up.
2 stalks long celery - diced (not chunks)
1 small onion - diced (not chunks)
9 oz. raw shrimp - diced up
12 oz. Tilapia - broiled & broken up
1 can - Blue Runner Seafood Gumbo
3 - cups fresh or frozen okra - pulse
2 - cubes Wylers chicken bouillon boiled I'm 2 cups water - set aside
1 or 2 dashes Worcestershire sauce
1/4 cup Soy sauce
Celery salt, easy
Any cooked rice or cauliflower rice, optional
~~~All bought at Walmart because it's cheaper and I can fix for one. Fish are individually frozen as servings. Like microwavable cauliflower rice and Wylers cubes.
***********Chicken and shrimp need to be cooked and cut up before anything starts. Same day or day before. Saves the entire standing up for a bit.
MEAT
**Chicken - boneless & skinless in casserole dish. (1/4-1/2 cup soy sauce poured over) - (350 for 50 minutes) - loose foil. Gauge how much sauce is right for you. Dice up. Make in advance. Rest! lol. 4 ounces
••Raw shrimp - (frozen at Walmart -$5.44) - boil and dice up. Make the day of. Each shrimp has 6-9 pieces diced up. 9 ounces
•Tilapia - broil with old Bay (I never have crab) Run individual frozen tilapias under slow running cold water. Cold oven - Old Bay on one side. Broil 4 minutes then flip and 4 minutes on other side. The tilapia gives it the sweetness like crab. 12 oz.
RELISH
******I always cook the chicken, peel/dice my celery and onion first. In that order. If I get interrupted - I can stop and still begin again later. Cook shrimp and dice it before you begin the Gumbo.
BEGIN!!!
• Make wylers broth with 2 cubes / 2 cups water
•Toss celery/onion into soup pot.
•Pour 3 T - Extra virgin Olive Oil in.
•Saute on high for one good stir.
•Turn eye down to 5 or Medium.
•You should see transparent or clear
•Pull off the eye.
•Cook fish here and run water over frozen okra. (3 cups)
~~Fish cooked and cooling, okra half thawed and pulsed.
Home stretch 😁
•Put pot back on eye.
•Pour Gumbo Base in.
•Pour in Wylers mix.
•Pour in diced shrimp, chicken and broken fish.
•Pulsed up okra.
•Seasonings.
•Bring to a boil again.
•Cut back to 7 and stir by watching 10 minutes. Don't let it stick.
~~Make rice or microwave cauliflower rice. Too much cauliflower takes the flavors away. I'm going to try Couscous next.
I hope I explained ok. Takes a few hours. The work is dicing, cleaning, preparing and thawing stuff.
Suggestion:
Cook chicken day before... OR just get 3 boneless, skinless thighs and dice up... then stir fry until done. Morning of.. take a rest. Sit at table and be dicing celery and onion. Ziploc baggie your relish. Once chicken is cooled and diced, put away until next day. I begin all this in the AM with chicken and relish ready. I do shrimp next. If you don't dice, your loved ones will pick out the big shrimp and it's nothing left but okra soup. Dice it all, crumble fish. It's in every bite. Shrimp is really the only hard part of my second day. ❤️
