In need of a hearty, comforting meal tonight? I’m got ya covered with this TACO TWIST SOUP 🥣👊
This feeds a whole herd of people - or 3 of my husbands. 😂 He legit ate about 5 servings in one night. Compliments to the chef? 😉
You can swap the ground beef or ground turkey, but make sure it’s only about 96% lean so you have a little good fat in there to flavor the soup.
:
• 1lb Grassfed 96/4 ground beef
• 1 green bell pepper, diced small
• optional: 1/2 an onion, diced
• 1 can low sodium dark kidney beans, drained
• 1 can no salt added corn, drained
• 4 C unsalted beef bone broth (or stock)
• 1 box rotini chickpea pasta
• spices: cumin, smoked paprika, Chile powder, oregano, + salt
In a large pot, sauté bell peppers in a little avocado oil or EVOO till mostly tender. Add beef and cook till browned. Add everything spices and stir well to combine. *I typically don’t measure my spices, but just eyeball them to taste. Add broth, beans, and corn; stir again. Bring to a simmer, cover, and cook 15-20 min. Bring up to a low boil and add pasta about 15 min before serving to let the noodles soak up allll the goodness. I served mine with diced jalapeños, cilantro, and crushed tortilla chips. GULP. 👅
