Just like you, I used to crash at 3 pm while juggling work deadlines and "Mom, I’m STARVING!" emergencies. Hello there, I'm Amy. it’s kinda wild that I spend my days designing spaces, immersed in sketching layouts; by evening, at home orchestrating dinner, refereeing homework battles, and soothing those inevitable meltdowns over socks that have mysteriously vanished. Life around here may be many things, but it is certainly never boring. Honestly, I never thought I’d end up so passionate about cooking. Growing up, my grandma basically ran her own five-star kitchen (in a tiny farmhouse, mind you), and she taught me that a pinch of salt is more of a feeling than an exact measurement—factually, I still eyeball it 90% of the time. My husband always jokes that I should start measuring with actual spoons, but hey, if Grandma said this is how we roll, who am I to argue? In both design and cooking, I've come to realize that creativity is the common thread. Whether I'm crafting a cozy reading nook or improvising a weeknight meal, I pour the same love and artistry into every detail. It's a busy, vibrant life—and I wouldn't have it any other way.

PARMESAN
2.5 lb chicken breast tenders (seasoned & cooked)
1 jar spaghetti sauce
½ cup mozzarella cheese
½ cup Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning
1 package slider buns
3 tbsp melted butter
1 tsp garlic powder
1 tbsp Parmesan cheese

CRACK
1½ lb store-bought rotisserie chicken (shredded)
8 oz cream cheese (softened)
1 cup shredded cheddar
1 cup shredded mozzarella
1 packet ranch seasoning
1 package slider buns
3 tbsp melted butter
1 tsp garlic powder
1 tsp dried parsley

BBQ
2 lb chicken breast (cooked & shredded)
1½ cups BBQ sauce
1½ cups shredded cheddar

Optional Topping:

Fried onions (crispy ones!)
1 package slider buns
3 tbsp melted butter
1 tsp garlic powder

BUFFALO
3 cups shredded chicken
½ cup buffalo sauce
1 packet ranch seasoning
1½ cups shredded cheddar
1½ cups shredded mozzarella

Crispy Parmesan Cabbage Fritters with Roasted Garlic Dip 🧄🧀
The snack that made me believe cabbage could actually slap.

Ingredients You’ll Need:
• 2 cups finely shredded cabbage (green or Savoy)
• ½ cup grated Parmesan cheese
• 1 large egg
• 2 tbsp all-purpose flour (or almond flour for GF)
• 1 garlic clove, minced
• ½ tsp onion powder
• Salt & black pepper to taste
• Olive oil for pan-frying

For the Roasted Garlic Dip:
• ½ cup sour cream or Greek yogurt
• 1 whole head of garlic (roasted)
• 1 tbsp mayo (optional, for creaminess)
• 1 tsp lemon juice
• Salt & chopped parsley to taste

Directions:
1 step:
Start by roasting your garlic. Slice the top off a whole head, drizzle with olive oil, wrap in foil, and bake at 400°F for 30–35 minutes until soft & golden. (Do this ahead to save time.)

2 step:
In a bowl, combine shredded cabbage, Parmesan, egg, flour, garlic, onion powder, salt, and pepper. Mix until everything’s evenly coated. Should look like a sticky veggie hash.

3 step:
Heat oil in a non-stick skillet over medium heat. Scoop small spoonfuls of the mixture and flatten slightly. Pan-fry until golden and crispy on each side (about 3–4 mins per side).

4 step:
Meanwhile, squeeze the roasted garlic into a bowl and mash it. Mix with sour cream, lemon juice, a touch of mayo, and season with salt + parsley. Chill until ready.

5 step:
Serve hot fritters with cold dip. Crunch. Dip. Repeat. Then pretend you planned to share these all along

Tips That Hit Different:
• Press out excess water from cabbage with a clean towel for max crispiness.
• Add red pepper flakes for a spicy kick
• These reheat beautifully in an air fryer.

• 1 box jumbo pasta shells
• 1–1.5 lbs chicken breast, diced
• Olive oil
• 1 tbsp black pepper
• 1 tbsp onion powder
• 1 tbsp garlic powder
• 1 tbsp Creole seasoning
• 1 tbsp Sazon
• 1 tsp smoked paprika

Veggies & Cheese:
• 1½ cups chopped broccoli florets
• ½ cup grated Parmesan
• ½ cup shredded Parmesan
• 1 cup shredded mozzarella

Alfredo Sauce:
• 1 stick unsalted butter
• 1 tbsp minced garlic
• 16 oz heavy whipping cream
• ¼ block cream cheese
• ¼ cup grated Parmesan
• Salt & black pepper (to taste)
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp Italian seasoning
• Reserved pasta water (about ½ cup)

Let’s get into this golden, melty goodness…

Ingredients You’ll Need:
• 4 boneless, skinless chicken breasts
• 1 cup mushrooms, finely chopped (baby bella or button mushrooms work great)
• ½ cup cream cheese, softened
• ½ cup shredded mozzarella cheese
• 2 cloves garlic, minced
• 2 tbsp butter
• 1 tsp Italian seasoning
• Salt & pepper to taste
• 1 tbsp olive oil
• Fresh parsley for garnish (optional but makes it extra)

How to Make This Melt-in-Your-Mouth Magic 💫
1 step:
Preheat your oven to 375°F (190°C). While that’s warming up, heat a skillet with the butter over medium heat. Add mushrooms and garlic, cook till tender and golden (around 5 mins). Let it cool a bit.

2 step:
Mix the mushroom mixture with the cream cheese and mozzarella. Season with a lil’ salt, pepper, and Italian seasoning. (You’ll be tempted to eat this mix by the spoon… I’m just saying.)

3 step:
Butterfly each chicken breast (slice through the side, not all the way through), then fill it with that cheesy mushroom mixture. Secure with toothpicks if needed—like chicken burritos but classier.

4 step:
Sear the stuffed chicken in a skillet with olive oil—just a few minutes per side until golden. Then transfer to a baking dish and bake for 20-25 minutes until the chicken is fully cooked and cheese is all bubbly.

5 step:
Garnish with chopped parsley and serve hot. Pair with roasted veggies or garlic mashed potatoes if you wanna go all out.

Tips for Success:
• Use room temp cream cheese for easier mixing.
• Don’t skip the sear—it locks in flavor and gives that crispy edge!
• Leftovers? Slice thin and serve over a salad the next day. Yes, you’ll still be winning.
