Cottonwood Hill Farms.... A note from John Springhower:

Below is a link to our new website as well as our webstore. The webstore shows everything we have available. However, we have an abundance of whole chickens. Both cut up/quartered and whole dressed birds. These birds were fed a majority of non-gmo feed but we had to finish on gmo grain as we were unable to get more non-gmo feed. This is the same with our pork and eggs, they are not 100% non-gmo because of feed availability. We also have 1 whole beef and a 1/2 of beef available with a December 9th butcher date. Our beef is 100% grass fed and finished, we do not do hormones, vaccinations or preventative antibiotics, however if we do have sick animal (this is very rare) we will treat with an antibiotic if that is necessary, same as I would with my children.

Cottonwood Hill Farms is a family farm that was purchased in 1955 by John's grandparents where they raised dairy cattle, hogs, sheep, chickens and a few horses.

Dr. Weston Price’s book Nutrition and Physical Degeneration summarizes his findings about “activator X,” a fat-soluble vitamin he discovered in butter (especially butter from cows eating rapidly growing green grass), fish eggs and the organs and fats of animals.

Let's support local farms! This lovely WAPF inspired farm is offering CSA's. Here's the scoop...

Here’s the summary of what we are offering.
At Lum Hollow farms we are blessed to be able to offer produce from our farm to your table. We use the Albrecht method of soil testing to measure the bioavailability of nutritional components present in the soil. We then add trace minerals, micronutrients, north atlantic kelp, enzymes, organic compost, lots of love, hard work, and blessings as needed to create the most nutritionally dense veggies we can. Although we've used organic practices for several years on our farm, we are currently in the process of getting certified as organic.
We are offering 50 CSA shares. We will be offering a half share for $20 (good size for a couple) and a whole share for $35 (good size for a family) per week. Pick up on Sunday from 9:00am-12:00 at the Aksarben farmers market I’m Omaha or Wednesday at our farm located at ~ 2937 Old Hwy 141 Hornick, IA 51026.
The shares will contain an assortment of the following items the first few weeks:

kale
chard
radishes
peas
arugula
lettuce
spinach
collards
rhubarb
onions
beets
dill
cilantro
basil

The items below will be included a little later in the growing season:
green beans
tomatoes
peppers
carrots
zucchini
okra
sweet potatoes
sweet corn
broccoli
cut flowers
cucumbers
watermelon
cantaloupe
winter squash

This is not a complete list, but we hope it helps give you an idea of what we are growing.

Hello WAPFers. Are you eating good lately? I just made butter and it wasn't as easy as YouTube said it was. But after some wasted raw cream (not good), I figured it out. I also bought THREE POUNDS of Amish Butter this past weekend at Koos Country Store in Hiawatha, Kansas. The Amish butter is good, but the spring butter from spring raw cream is nutritionally superior! Here's a picture of me dividing up my Amish butter and freezing it (they are the "rounds"). Divino Nino Dairy has some extra milk if you're interested in getting some delicious raw milk. Here's the info from the owner, Melissa Rawe.

First come, first serve milk/cream pick up from 9am-10am on Saturday mornings in May and June.
We will close promptly at 10 or when sold out.

This is NOT for regular customers who already have a time spot to pick up their milk.

Milk $10 per gallon
Cream $18 per quart $9 per pint

Hello great eaters...here's a recipe that I love. Salmon Cakes ala Miranda
1 can of premium salmon
(I like Wild Planet brand 6 oz Wild Pink Salmon)
1 egg
1 + 1/2 tsp Old Bay Seasoning
1-2 Tbsp. Lard for frying.

In a Cast iron skillet, melt lard and get the pan nice and hot on medium/high heat. Beat egg, flake the salmon with a fork and add Old Bay Seasoning. Mix all together. Divide mixture into 4 equal parts and drop into your hot pan in 4 little mounds. Allow to fry for about 1-2 minutes. Mash the top with your spatula and then flip your salmon cake over. Allow that side to cook for 1-2 minutes. Flip again...allow to cook for 1-2 minutes, flip the last time...allow to cook for 1-2 minutes. These are perfect to eat! We find 1-2 patties to be very rich. Add a side salad to this meal to complete.

Serve with tartar sauce (below)

Miranda's Tartar Sauce

4 Tbsp. high quality mayonnaise
(I like Primal Kitchen Mayo)
1/4 tsp dill (I used dried but you could do fresh. I crush as I add it)
1 Tbsp. lemon juice
1-2 Tbsp. capers (without the juice)

Mix together and top your salmon cakes with this sauce. Yummy and healthy!
