Meet Class 31 Intern Nyahon Both!
Fun Fact: I love baking and learning new languages
Favorite Food: Ethiopian Food
Rotation Most Excited About: I am looking forward to the Farm to Table rotation. I’m excited to see how the whole process looks like in action.
Why the Dietetics Profession?: I want to become a dietitian because I think everyone deserves to have a healthy relationship with food. Since everyone has to eat I’d love to be an advocate/resource for people to cultivate healthy relationships with food. I hope to become not only an RD but an IBCLC so I can work with patients and families in early life stages.

Our intern Amy dressed as the phosphorus fairy to talk about phosphorus with her dialysis patients!

Amy is in her specialty rotation at the Davita dialysis clinic in Hopewell. Interns at this location get a “lobby day” where they can choose a topic to provide education on at the clinic. Phosphorus is an important topic among dialysis patients because when you have chronic kidney disease, your kidneys can not remove phosphorus from your body. Extra phosphorus causes body changes that pull calcium from the bones, making them weak. Phosphorus is also in many foods we wouldn’t expect, making education and awareness of this nutrient very important!

Yesterday, the interns were able to see the foodservice kitchen at Central State Hospital!

Central State Hospital has gone by a few different names within its 150 year history and it's foodservice department has adapted to suit the patients on campus. They currently use a cook-chill method. This is when meals are prepared 2-3 days in advance to be later reheated. Everyone was able to try a variety of foods during a test tray panel.

This historic hospital visit was a great learning opportunity! 🍎🥼🏥

Last week, I had the distinct privilege to visit the Academy of Nutrition and Dietetics Headquarters in Chicago. I have been on this professional journey of Dietetics since I was 16 years old. It's amazing that I have been a registered dietitian for 16 years and a Dietetic Educator for 11 years. When I reflect back over my career, I'm most grateful for the students and interns that I have helped to navigate this journey. This is my Why!

This week, our intern Sarah was able to observe the TPN compounding process during her clinical rotation!

TPN is a method of feeding that bypasses the GI tract and goes directly into the vein. It’s used when patients can not or should not use their GI tract. Because it’s administered through a vein, the environment where it’s made needs to be sterile. Hence Sarah’s outfit 😎🥼🧪
