These homemade poke bowls are a labor of love due to their many components, but are so worth it!

I upgraded my recipe a bit from last year (swipe to see the difference). I wanted to boost the protein content and did so by adding some marinated . The flavor was boosted as well from the cilantro and sesame seed garnishes + the addition of spicy mayo! 🌶️

So some of you may have seen my new tofu press that I posted on my story a few weeks ago. Well, it has changed the game for me! Now I can make perfect teriyaki tofu way more conveniently! If you’re an avid tofu maker, it’s worth investing in!

(PS I did season my veggies after snapping this pic. The steamed green beans just looked too bright and perfect to not capture immediately).

I’ve never been super keen on relying on vegan convenience foods and meatless meats. But being so busy recently, it has made mealtime easier and allows me to give into meat cravings without having to order out and pay top dollar for veg alternatives.

I wanted a side salad for my pasta and kinda just threw this together. It was so random, but ended up tasting great!

This made me realize there are a few basic components that every great salad has:

something…

🥬 Leafy (fresh collard greens)
🍇 Sweet/Tangy (grapes)
đź§€ Salty (vegan Parmesan)
🌮 Crunchy (tortilla chips)
🍋 Acidic (lemon vinaigrette)

If I were making a salad entree, I would add a protein like beans or tofu and a grain like quinoa or pita bread and have a way bigger portion. Adding nuts and seeds is another great way to get more variety, nutrients, and crunch!

Also! I was excited to find this protein pasta sauce, which helps bump up the protein in my pasta on those days I don’t have time to prep tofu or another plant protein! It is a small amount per serving, but still counts!

Hope these tips help you in building your own salads and find convenient ways to meet your nutrient needs. 🥗 Don’t be afraid to try something unorthodox… it might work out better than you think!
