🥗 Fall Harvest Salad 🍂
A cozy + refreshing mix of fall flavors!

Ingredients:
3c assorted lettuce • 2c arugula • 2c roasted butternut squash • 1c roasted beets • 1c sliced apples • ½c feta • ½c roasted pumpkin seeds • ½c blueberries (optional)

Dressing:
4T olive oil • 1T balsamic vinegar • fresh basil ribbons • 2 cloves garlic • salt + pepper

Directions:
Roast beets + squash at 400°F for 12–15 mins. Toss lettuce + arugula, add roasted veggies, apples, feta, seeds, and blueberries. Drizzle with basil balsamic vinaigrette.

I’m working on a full recap of my recent Greece trip (coming soon!), but in the meantime, I wanted to share a little moment that’s stayed with me.

On my last morning walk in Agistri, I stopped to take in the sunrise and the quiet road ahead. September has always felt like the start of a new year for me - a chance to reset routines and refocus on what nourishes us. Just as this path stretches forward, so does the opportunity to bring more balance to our days - whether that’s through the meals we prepare, the way we move our bodies, or simply carving out time to pause and reflect.

September reminds us that small, steady steps can lead to meaningful change, and that caring for ourselves is what truly lights the way forward.
