My current go-to afternoon snack: peanut butter stuffed Medjool dates.

PB2 + all-natural peanut butter + a little water, mixed and stuffed into pitted dates. Two of them is a serving. Protein, fiber, natural sweetness — and genuinely enough to carry you through to dinner.

I make a batch on Sunday and keep them in the fridge all week.

The full recipe — plus everything worth knowing about why dates are more than just a sweet treat — is in the latest blog post. (https://www.rootsandrosesnh.com/blog/thesweettruthaboutdates)

5 Whole Food Plant-Based Swaps to Try This Week

Making the shift to plant-based eating doesn't have to happen overnight. Here are 5 simple swaps to get you started:

Cashew cream instead of heavy cream in soups & sauces.

Lentils or black beans instead of ground meat in tacos & pasta.

Oat milk or almond milk instead of dairy in your morning coffee.

Nutritional yeast instead of parmesan for that cheesy, savory flavor.

Small swaps = big impact over time.

Spring is slowly making its way in, and behind the scenes at Roots & Roses, I’ve been working on something special.

I’m currently creating our spring catering menu—thinking fresh, vibrant, and deeply nourishing.

This season always inspires lighter, brighter dishes…
• Crisp greens and herbs
• Roasted spring vegetables
• Simple, beautiful flavors that let the ingredients shine
• Herbed hummus

Everything is rooted in whole food, plant-based cooking.

There’s a lot of tasting, tweaking, and a little bit of creative magic happening in the kitchen right now

If you have a spring gathering, celebration, or event coming up, I’d love to create something seasonal and personalized for you.

Something special is happening April 10–12 in Tuftonboro, NH.

I have the honor of being the on-site chef for Cindy's Osteoporosis Retreat at Quietude — a peaceful lodge tucked away in the Lakes Region of New Hampshire.

Together, Cindy and I have worked to create a menu that truly supports the participants: locally sourced, thoughtfully prepared, and packed with bone-nourishing ingredients.

This is the kind of work that reminds me why I love what I do.

Although this retreat is full, you can learn more about Cindy at this link (https://purelightyogacenter.com)

A little peek behind the scenes…

So much of what I do starts long before the cooking begins — thinking about seasonal ingredients, planning menus, and imagining how a dish will feel when it’s served to a table of happy guests.

That quiet creative process is one of my favorite parts of being a chef.

Sometimes people ask what Roots & Roses is all about.

In simple terms: I help people enjoy beautiful, nourishing food made from whole plant ingredients.

Whether it’s a catered gathering, personal chef meals, or a cooking class, my goal is always the same — food that feels both comforting and vibrant.

Good food can truly bring people together.
