Struggling to get enough protein at breakfast? Try this high-protein baked lemon blueberry oatmeal — packed with flavor and over 30g of protein per serving! See recipe below.
 
Recipe: Makes 1 serving | ~32g protein
 
Ingredients:
 
½ cup rolled oats
1 scoop (about 30g) vanilla protein powder (whey or plant-based)
⅓ cup unsweetened almond milk (or milk of choice)
¼ cup plain Greek yogurt (0% or 2%)
1 egg
½ tbsp chia seeds (optional)
½ tbsp maple syrup or honey (optional)
½ tsp baking powder
Zest of ½ lemon
Juice of ¼–½ lemon (to taste)
⅓–½ cup blueberries (fresh or frozen)
 
Instructions:
 
Preheat oven to 350°F (175°C). Lightly grease or spray a ramekin or small baking dish.
In a bowl, whisk together the egg, milk, yogurt, lemon juice, zest, vanilla, and maple syrup.
Stir in oats, protein powder, baking powder, and chia seeds until well mixed.
Fold in the blueberries.
 
Bake for 25–30 minutes, until golden on top and firm in the center.
 
Let cool for a few minutes and enjoy!
