Wrap up summer with roasted red pepper hummus and fresh veggies! A light and tasty meal. 🌯🌢️

Easy Hummus Tortilla Wraps
Ingredients
4 large whole wheat wraps
2 cups of your favorite hummus
2-3 cups of shredded lettuce
2 whole roasted red bell peppers sliced thinly
1 cup of grated carrots
1 cup of alfalfa sprouts
1 avocado, thinly sliced
1 red onion, sliced

Instructions
Lay out each wrap and spread about ΒΌ or Β½ cup hummus on each top near the center so you can roll it up.
Layer the rest of the veggies in the order listed in the ingredients. Enjoy!

Get your grill on with these herbed yogurt chicken skewers! Tender, flavorful, and perfect for summer nights. πŸ₯’πŸ—

Herbed Yogurt Chicken Skewers
Ingredients
1.5 lbs chicken tenders
1/2 cup Greek yogurt, plain 5% full fat
1/2 cup fresh herbs Cilantro, Parsley, Dill, Mint (any combination)
1.5 tbsp lemon juice fresh squeezed
2 tbsp lemon peel chopped roughly
2 cloves garlic fresh, minced
1/2 tsp sweet paprika ground
1/2 tsp cayenne ground
1/2 tsp cumin ground
1 tbsp olive oil extra virgin (optional)
salt kosher
pepper ground

Instructions
In a small bowl, combine Greek yogurt, fresh herbs, lemon juice, lemon peel, minced garlic, cayenne, paprika, cumin, olive oil (optional) salt and pepper. Combine well.

In a zip type plastic bag, add the chicken pieces.

Add all of the yogurt marinade to the chicken pieces inside the bag.

Using tongs, move the chicken pieces around so they are all coated with the yogurt marinade mixture.

Zip the bag and lay flat on a plate and place in refrigerator.

Marinate from 2 hours to overnight depending on what chicken pieces you are using.
See notes below for suggested marinating times.

Once the chicken is fully marinated, remove chicken pieces from bag. Discard bag and remaining marinade.

Spray or brush pieces with olive oil or neutral oil.

Place chicken on a preheated grill. Rotate often so it doens't burn. Cook until done and instant read thermometer reads 165Β°.

A pop of summer sweetness! Juicy raspberries and creamy coconut milk combine in these popsicles for a treat that's as satisfying as it is refreshing. πŸ‡

Raspberry Coconut Popsicles
INGREDIENTS
2 cans full-fat coconut milk* (400mL each)
1/4 cup honey (sub maple syrup or agave syrup)
1 tsp vanilla extract
1 1/2 cups frozen raspberries**

INSTRUCTIONS
In a blender or food processor, combine both cans of coconut milk, the honey, and vanilla extract. Blend on high for 15 seconds to combine. Remove half (400mL) of the mixture to a measuring cup, or divide amongst the popsicle molds*** and freeze for at least 30 minutes before adding the red layer.

Add the frozen raspberries to the remaining coconut milk mixture in the blender and blend on high until thoroughly combined. Once the white part is frozen (I touch it with my finger to test), add either half of the red mixture to the molds, and freeze again, or add all of it and insert the popsicle sticks, before freezing again (see notes).

Freeze for at least 5-6 hours before running hot water over your molds and removing the popsicles. Enjoy immediately, or freeze in a large resealable bag for later!

Sip on summer with strawberry basil lemonade! Refreshing, fruity, and a perfect thirst-quencher. πŸ“πŸ‹

Strawberry Basil Lemonade
INGREDIENTS
10 lemons, juiced, about 1 cup of fresh lemon juice
ΒΎ cup super fine sugar
4 cups warm water
8-10 strawberries, tops removed
β…“ cup fresh basil
Β½ cup vodka optional

INSTRUCTIONS
Juice the lemons and transfer the juice into a large pitcher.

Add the sugar and the water and stir to combine and dissolve the sugar. Let cool entirely.

Add the strawberries and basil.

Using an immersion blender, blend the mixture for about 20 seconds just until the mixture turns pink and the basil is finely chopped. Strain out any of the basil bits if you don't want them, they'll have already infused into the drink.

Add alcohol if desired. Serve over crushed ice and enjoy!
