Hey salsa lovers!
For those of you that don’t know me personally or those that I’ve been out of touch with I wanted to give y’all a little update.
I slowed down in the Fall on providing y’all with award winning salsa because I’ve got two football playing big ol’ boys in the house. It made sense with the busy schedule to take a break.
Literally a week after football season ended I had to have an emergency spinal surgery. What’s that old saying about good intentions??
All that being said, I will be spending the last half of January building up stock and be at it again in February.
So, stay tuned for not only where I’ll be and how you can get salsa but also for exciting new things ahead! Like, QUESO, and BBQ Sauce!

Tonight I’m prepping Scottish eggs for an anniversary trip with my husband. Tomorrow we celebrate 20 years together. The highs, the hard work through the lows and the commitment. Here’s to the next few decades!
I’m also cooking dinner for two tonight, something I never do. I’m usually preparing for at least 6 hungry people. A horde of growing people expecting a feast.
The oil was hot. Why not fry my zucchini?! Leave it to me to ruin the nutritional value of a perfectly good vegetable. 🤣

Y’all. There are questions with more than one right answer. There is more than just one right way to do many things.
However, there is only one RIGHT way to prep a pan for cornbread.
Cornbread is a simple but important staple. The foundation to a lot of “peasant” food. It’s also delicious. Don’t screw it up. (Sorry. That sounds mean 😬)
Use cast iron. A 10-12” skillet.
Melt at least a couple tbsp of butter in the pan before you add the batter. Use more butter, if you’re feeling it. Don’t be afraid of the butter!
Trust me.

Cornbread:
1 cup all purpose flour (you can use GF)
1 cup cornmeal
1.5 tsp baking powder
1 tsp salt
1 egg
1 cup of milk (1.25 if you’ve used GF FLOUR)

Mix together.
Pour into prepared pan.
Bake at 400 for 20 minutes or until golden brown.

Just wanted to share that on Christmas Day I FINALLY managed to keep my scotch egg yolks runny. It was a Christmas miracle I can hopefully repeat.
Y’all don’t make me feel bad for the bad picture or my Christmas “fine china”.
Side note: my boys decided to put maple syrup on these?! Genius! Is this a thing or are they food masterminds?!

They’re not gonna make the Pinterest boards but my kiddos made them and they’re darn delicious. I’ve never been one to be precise and exacting with my sugar cookies anyway. It’s an impractical food so I say the experience and what’s gained in the doing ranks higher in importance than the looks.

One of my favorite Christmas presents as a kid was a cassette player just like this one. That year I also got a dance ribbon (think rhythmic gymnastics). Imagine the moves as I borrowed my Dad’s Huey Lewis and the News tape and choreographed greatness in my leotard and leg warmers! Y’all, the heart of rock and roll is still beating.
