Milestone day for Parker yesterday…his first Taekwondo lesson! 🥋

We have spent a long time researching activities and sports that will work with his hemiplegia (right-sided weakness and motor loss from his brain tumor) and we are thrilled to find this awesome studio and teacher that are excited to work with him! He is very proud of himself and we are very proud of him! 🥰

Also, you can see how much stronger he is these days…there was a time we weren’t sure he would ever be able to jump, let alone learn a martial art. The sky’s the limit for our super kid! ✨

Here we go! First day of Kindergarten for Drew and Second Grade for Parker! 📚🍎🚌

Boys are excited (and a little anxious) for the new school year, but I have a feeling it’s going to be the best one yet.

Starting their day with eggs in various forms, because their mother is super pushy when it comes to breakfast choices and eggs are always the answer. 😂

Just popping by to say, Drew is FIVE! 🥳

Hard to believe that my baby, the little brother who’s birth day was picked to accommodate big brother’s chemotherapy schedule, is now starting kindergarten.

This has been a summer of change for us—new jobs, new routines, health challenges, and the loss of a loved one. But we are emerging on the side stronger, happier, and more determined than ever to live each day to the fullest.

Parker is doing great by the way. I’ll post an update on him in the next day or so.

Wonderful news to share—Parker’s MRI looked better than we thought it would and the small area of abnormal signaling that showed up on the scan was NOT on his original tumor location! Hallelujah!

We had a great appointment today with Dr. David Sacco, our superhero neurosurgeon, who did Parker’s original craniotomy and partial tumor resection in 2016.

It looks like this small signaling area on the scan was there last year, but this year it was brighter and caught the attention of the radiologist who read the MRI. It’s definitely something he wants to watch, but he’s confident we can wait a year for the next scan.

At this point it may be post-chemotherapy changes that we’re seeing, but we just don’t have a crystal ball. So we will watch and wait and keep on doing everything we can to nurture and nourish Parker’s brain and body.

This is truly the work of answered prayers. Thank you to everyone who has lifted us up over the past few weeks! Truthfully, I’m a bit overwhelmed by this incredible news—it’s so much better than I dared hoped. 💛

Easy Keto Kid Eats! 🌟

Here are a few of Parker’s favorite meals from the past few days (Clockwise from top left):

1. Cheeseburger sausage and alfredo zucchini
2. Salami and Kerrygold butter sandwich on low carb bread
3. Pepperoni Pizza Bake and sautéed zucchini
4. French Toast Bake with blueberries and bacon

These are just a few highlights from the past week. There have also been a lot of eggs, avocados, and high fat keto treats like chocolate pudding and ice cream.

Remember, therapeutic ketosis is a metabolic state, not a prescribed list of foods and bio-individuality matters! Parker has almost 5 years of keto/low carb experience and his body very quickly transitioned back into therapeutic ketosis—it knows what to do. It’s ok if it looks different for you or your loved one, especially at the beginning.

We also test his blood levels daily (glucose and ketones) and supplement with electrolytes. Both are non-negotiable for us. 👍🏻

If you are considering embarking on a therapeutic ketogenic diet journey for your child, just know that it IS possible and you are more than capable. 💛

Parker’s latest MRI has ushered in a new season of unknowns for me. And while it is difficult, it is also familiar.

In the last 5 years since his original brain tumor diagnosis, I’ve learned to make room for opposing feelings—I’ve found that in a single moment I can feel joy and sadness, anger and forgiveness, grief and hopefulness.

These words of Morgan Harper Nichols are a balm to my soul in this moment. In this season of unknowns, I will chose courage, even though I am afraid. I will chose grace, even though I am critical of myself. And above all, I will chose love.

🚨 NEW RECIPE! 🚨

We have found the most delicious, decadent keto chocolate pudding that is sure to be kid and grownup approved!

It’s very special to me, because the foundation of this recipe is FRIENDSHIP and COMMUNITY.

My good friend and fellow keto momma, Maggie ( ), shared the foundation of this recipe with me after we got the news about Parker’s recent scan. She is a true friend and an incredible advocate for her daughter Reese and the greater medical keto community.

Shared with permission and a few minor modifications, we are calling it “Reese’s Chocolate Pudding” in honor of our good friends.

Parker can’t get enough of it and it has been on constant rotation this week as he’s transitioned back into therapeutic ketosis. It’s wonderful chilled in the fridge or you can freeze it as a popsicle.

Super Parker is starting the new year off with a bang! 🌟

In just one week he dropped his fasting glucose 20 points and increased his ketones from 0 to 2.1! Incredible and just shows how responsive his body is to a therapeutic ketogenic diet.

We are working on keeping him engaged with eating keto foods he likes and supporting his emotional state and self-esteem. It’s not been easy, but he is doing really well and I’m so proud of him.

Parkeroni, fathead pizza master. 🍕

Back to basics means back to recipes we’ve loved for years and that taste GOOD. This is a wonderful recipe to get kids excited about eating keto—it tastes like the real real thin crust pizza. And it’s fun to customize their own.

PIZZA DOUGH (makes 1 large or 2 smaller crusts):
2 cups shredded mozzarella
2 Tbsp cream cheese
¾ cup fine ground almond flour
1 egg
1 tsp garlic powder (optional)
pinch salt

Preheat oven to 425. In a microwave safe bowl combine mozzarella and cream cheese. Microwave for 2 minutes or until melted. In a separate bowl combine almond flour, egg, and seasoning. Add almond flour mixture to melted cheese and stir. After a minute, use your hands to fully combine almond flour mixture with cheese. Shape into a ball.

Roll out crust evenly on a sheet of parchment paper. The dough is sticky, so consider using a second piece of parchment or a silicone rolling pin. Using a fork, pierce the crust all over. Next, transfer the parchment paper and crust to a baking sheet and bake at 425 for 8-10 minutes until light brown.

Remove crust from oven, flip over on fresh parchment and let cool 2 minutes.

Optional Toppings:
-Pizza sauce (look for no sugar added)
-Italian blend cheese
-Pepperoni
-Olives
-Bell Pepper
-Mushrooms

Spread pizza sauce over crust, leaving a ½ inch border. Cover with desired toppings. Return to oven for 5 minutes, or until cheese is melted and top is golden brown. Cool and serve!

Yesterday Parker and I had a long conversation about his “magic diet” (aka therapeutic keto) and that we were going to start it again.

He is processing heavy things (too heavy) for a 7 year old and it breaks my heart. But I told him he wouldn’t be alone in doing it and that I was going to be there every step of the way.

Luckily we know what to do—start with the basics that work. He and I brainstormed foods he likes right now and we went through some of my old posts so he could tell me what he wanted me to make.

Our first goal is getting him back into deep ketosis and he’s already well on his way. And after just 24 hours his fasting glucose has dropped 20 points and he’s already registering ketones.

This time around I’ll be sharing what feels authentic while also respecting the fact that he is is 7 now and this is his journey and no one else’s.

The next chapter in Parker’s brain tumor journey—Stable scan with a small area of concern to watch.

It’s not the news I wanted, but it’s not totally unexpected. And is just another reminder to trust my gut.

After 3 years of near-perfect stability, there is a very small (4mm) signal of abnormality in his left thalamus (area of his original tumor). It’s not enough to warrant immediate attention, but it’s a small red blinking light that’s caught my attention.

We will meet with our neurosurgeon to view the MRI mid-January and I fully anticipate a “watch and wait” protocol until the summer.

After the holidays we will start Parker (again) on a strict ketogenic diet to see if we can deal with this through diet before the summer.

Happy 7th Birthday, Parker! 🎉

I am so thankful for this brave, spunky, kind-hearted boy who made me a mother! He’s been through so much in the last 7 years and I can’t wait to see what the future has in store for him.

Per his request, we spent the morning at his favorite “treehouse” park, had Chinese food for lunch, and I made a Star Wars birthday cake for dessert. ☺️

For his cake this year I kept it simple and made ‘s keto spice cake and cream cheese frosting—it’s on her blog, be sure to save it! Everything Tayo makes is delicious and I was really pleased with how this recipe turned out.

I ordered fancy (not low carb) gold and black sprinkles and I love how it turned out. I also use figurines for decorating—they cover my lack of cake decorating skills and double as an awesome present.
