Why I love fajitas:⁠
* You can pile on any veggie you love 🌶️🥦⁠
* The seasoning stays simple (but big on flavor)⁠
* Works for keto eaters AND non-keto family members 💙⁠
* Adaptable to your mood or what’s in the fridge⁠

Sharing one of my go-to, and delish recipes: Poblano & Portobello Fajitas — hearty, smoky, and kidney-friendly.⁠

🌮 Poblano & Portobello Fajitas (Keto & PKD-Friendly)⁠

INGREDIENTS⁠
* 1/4 cup extra virgin olive oil⁠
* 1/4 tsp sea salt⁠
* 1 tsp black pepper (or to taste)⁠
* 1 1/2 tsp garlic powder⁠
* 2 1/2 tsp chili powder⁠
* 1 tsp paprika⁠
* 1 tsp cumin⁠
* 12 oz portobello mushroom caps (4 caps, sliced 1/2” thick)⁠
* 3 poblano peppers (seeded & sliced into strips)⁠
* 2 red bell peppers (seeded & sliced)⁠
* 1 red onion (sliced)⁠
* 2 avocados⁠
* 2 cups cauliflower rice (steamed)⁠

DIRECTIONS⁠
1. Preheat oven to 400°F. Line a sheet pan with parchment.⁠
2. In a small bowl, whisk together olive oil, salt, pepper, and spices.⁠
3. Toss mushrooms, peppers, and onion in the spice mixture. Let marinate 5 minutes.⁠
4. Spread veggies evenly on the sheet pan and roast 35–40 minutes, stirring halfway.⁠
5. To serve: layer cauliflower rice, roasted veggies, and avocado in bowls. Finish with fresh lime, cilantro, and a drizzle of hot sauce if you love heat.⁠

Not only is watermelon delicious — it’s also PKD-friendly. 🙌⁠

Here’s why:⁠

✅ Rich in potassium – great for supporting blood pressure⁠
✅ Loaded with lycopene – a powerful antioxidant that helps fight free radical damage (and gives watermelon its red color!)⁠

Yes, watermelon is naturally sweet and a bit higher in natural sugars compared to berries — which can make it a bit trickier to fit into a ketogenic plan… but not impossible!⁠

💡 Here’s what I want you to remember about fruit and PKD:⁠

Yes, fruit has natural sugar.⁠

No, eating fruit will not make your cysts grow.⁠

With keto therapy, we reduce net carbs — which means we’re more selective about which fruits (and how much) we eat.⁠

Inside KMP, members have enjoyed watermelon in feta salads and even in tropical-inspired smoothies! 🍉🥗🥤⁠

It’s not that watermelon is bad for PKD — it’s just higher in carbs, so we enjoy it more mindfully.⁠
