You have a sad drawer of wilted veggies in your fridge. I know it. ๐ฅฌ
Instead of throwing them away feeling guilty, do this once a week:
Take out everything from that drawer
Anything not obviously rotten goes into a pot or sheet pan
Add olive oil, salt, pepper, and any spice you have
Roast at 400ยฐF (200ยฐC) for 15โ20 minutes
Now you have roasted veggies for the next 2 days. You saved money, reduced waste, and ate more fiber โ without planning.
That's not a recipe. That's a rescue mission.
