Mother Nature helps us lose weight more easefully in Spring and Summer with an abundance of leafy greens. Eating balanced meals also assists us to LOSE WEIGHT and KEEP IT OFF! That's partly because digestion is enhanced when the meal is balanced. And partly because when you eat enough at meal times you eliminate the temptation to snack in between. A delciously simple, deliciously healthy breakfast. Asparagus with walnut/parsley pesto, my favorite seed, almond, and oat bread, raw pumpkin seeds, and Tulsi tea. A satisfying nutrient dense meal in less than 15 minutes - (the pesto had been made a few days before). Ample healthy fat and plenty of fiber kept me completely satisfied until lunch!

Happy month of May! Spring meals need to be light, full of greens, plenty of protein and fats, but not too many carbohydrates. Here's a great green soup that you can make in 15 minutes. You determine the quantities based on preference and how much soup you want to make.

Start sautéing a slice or two of onion in a little olive oil. After 3 minutes add a few cut green beans, 2 or 3 sliced broccoli stalks, and some herbs (thyme, oregano, basil). Cover the skillet while you wash and slice two large collard leaves (or substitute 1/3 -1/2 cello package of pre-washed greens). Add the greens with 2 Tbsp. of water and cover until the greens are fully wilted. Remove veggies to a small high speed blender and add the desired amount of vegetable broth to get the consistency you want. If you have leftover soup in the refrigerator, add some avocado and blend again for a delicious breakfast smoothie.
