For some reason, when school starts in the Fall I feel like I end up throwing meals together. The faster the better.

This MUSHROOM AND CHICKEN SAUSAGE CAULIFLOWER GNOCCHI not only comes together in less then 20 min, but it’s creamy, savory and super filling! Keke (my 3 year-old) ate 3...yes 3 kid-sized bowls! 🤗😊.

Start by prepping the following:
1 package sliced
1 diced onion
1 diced carrot
1/2 sliced
1 package mild Italian (ours was from )

Sauté and brown your chicken sausage in a skillet over medium heat.

Add all the veggies you prepped with 1 tbs EVOO and let soften for a few min.

Next add a bag of frozen with 2 tbs butter - the is my go-to these days! Let cook for 5 min or so.

Deglaze the pan with 1/4 cup dry and 1/4 cup water. Let the wine evaporate and scrape up the bottom of the pan. Season with kosher salt to taste and top with fresh basil!

I ate mine on a bed of with on the side and loved every creamy, delicious and nutritious bite 😊.

What’s not to love about TACO SOUP?! It’s colorful, flavorful, - packed with lean protein and all made in the 🙌🏻! This saved me tonight after a fun, but full day!

Start by heating a tbs EVOO in a skillet over medium heat. Sauté 1 pound of lean ground meat (I used ) until cooked through.

Next, add the meat to the along with the following:
1 diced
1 diced onion
3 small carrots diced
1/2 diced deseeded
3 diced garlic cloves
3 cups organic
1 can diced tomatoes with green chilies
1 can rinsed and drained
1 can rinsed and drained
1 tbs chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp coriander
1/2 tsp paprika
1 tsp kosher salt plus more to taste

Stir all together and cook on low in the slow cooker for 6-8 hours.

30 min to an hour before serving add in corn shaved from one ear of corn.

Serve with fresh cilantro, diced jalepeno, avocado slices and instead of sour cream! Delightful in every way!

My sweet tooth is a problem. Diagnosable 🙈. But making healthy treats makes me feel less guilty about it.

These CHOCOLATE CHIP CRUMBLE COOKIES are and amazing! I look forward to eating every bite and am so so sad when they are gone.

To a mixing bowl combine:
2 cups superfine
1/4 cup
1/4 cup
2-3 tbs
1 tsp baking soda
1 tsp vanilla
Pinch of kosher salt
1/4-1/2 cup

Mix all together. Here is the important part...let it sit in the refrigerator for 30 min or longer so that the dough will come together.

Then form into balls and bake at 350 for 12 min or so. Let cool and store in the fridge.

I love eating these right out of the fridge. They crumble, have amazing texture and are a perfect 😘.

Sometimes I just want a healthy and fresh soup for dinner. Even in summer. And yes, even in Florida. This PERUVIAN CHICKEN AND CAULIFLOWER RICE SOUP is a take on a recipe from the cookbook and it is amazing! Modify to your tastes but we all loved it in my house.

Start by making your cilantro purée. To a blender add:
3 juiced limes
1/4 cup water
1 chopped onion
1/2-1 deseeded jalepeno
1-2 cups cilantro

Purée until smooth and set aside.

Next up, bring 8 cups chicken stock to a boil. Add 2 and simmer for 20 min. Remove from the pot, shred and set aside.

To the pot add:
3 cups
1 cup

Cook for 5 min.

Add the shredded chicken and cilantro purée back to the pot and simmer for 5 minutes more.

Serve with lime wedges and extra cilantro!

The perfect - and filled with flavor!

As far as I’m concerned breakfast for dinner is always a good idea! And this ASPARAGUS MUSHROOM FRITTATA got devoured in my house. It’s savory, tender, nutritious, and super fast to throw together.

Start by heating your skillet over medium heat.

Sauté 1 diced onion in a little until softened.

Add in 4 slices diced and 1/2 cup diced and stir until both are browned/cooked through.

I then added 1/2 cup diced (from dinner the night before), but feel free to add any veggies you love!

When the asparagus is heated through add the egg mixture to the veggie mixture in the pan. This includes:
12 (whisked)
2 tbs fresh thyme leaves
Kosher salt and pepper to taste

Bake at 375 for 12-15 minutes and it will be perfect!

I topped ours with an mixed greens salad with feta and called it a night! So fresh, so savory, and so right for a busy night. Muah!

C is for...Caterpillar!! And cookies😉. Channeling my inner preschool teacher over here! We even pretended to be caterpillars and used blankets as cocoons lol. Thank you for the inspiration!

The celery caterpillars were made using either or cream cheese from as the base. Then I topped them with tomatoes, cucumber slices, grapes, kiwi slices, etc and I used dried cranberries for eyes😊.

The cookie recipe is a new one I’m playing with - no butter and honey instead of sugar! I’ll post it once I’ve tried it a couple more times. Hope y’all are well!

Pimento cheese is a classic southern appetizer and everyone has their go-to version. This one is mine. This JALEPENO PIMENTO CHEESE checks all the boxes for me and is definitely a 🙌🏻. Creamy, spicy, colorful, mmm mmmm!

To a mixing bowl add:
1 8oz block of
3/4 cup of good or
8oz grated
1-2 diced (depending on heat preference)
1 tbs grated onion
1 small jar drained
2 diced garlic cloves
2 dashes of Worcestershire sauce
Pinch of cayenne (optional)

Mix all together and serve with baby bell peppers, pita chips, crackers, etc.

We also love spooning this into bell pepper and broiling it for a few minutes to get it bubbly and brown on top. Yummy yummy any way you serve it - enjoy!

For I made one of our faves...CAULIFLOWER FRIED RICE!

This one is a winner all-around - and super fast to put together! 🙌🏻

Start by heating 2 tsp in a skillet over medium heat.

Sauté 1 diced onion and 3 diced carrots for a few minutes until softened.

Add:
1 tbs diced
1 large diced garlic clove
1 tsp (some good for us!)

Sauté for another minute.

Here’s what makes this dish so simple - add in a frozen bag of 😍. Reduces your prep work by about a million. Stir until heated through.

Finish by adding 2 and scramble/stir until cooked through. Season with 2 tsp - 2 tsp rice wine vinegar and kosher salt to taste. Top with scallions and serve!

The girls loved it just as much as we did! Hope you do too xoxo.

I wouldn’t say I try and hide veggies from my girls, but...I am always looking for ways to make dishes more while equally delicious! 😉

These MINI TURKEY MEATLOAVES WITH PIQUANT SAUCE are truly amazing and frankly, are better with the veggies in them!

Start by heating 1 tbs EVOO in a skillet over medium heat.

Add 1 diced onion
2 cups grated
1 cup grated organic (squeeze the water out)

Sauté the veggies for 5-6 minutes until softened.

Next, add the softened veggies to 1 pound organic

Mix in 1 diced garlic clove
1 egg
1/2 cup old fashioned oats
1/2 tsp black pepper
1/2-1 tsp kosher salt

Mix together with your hands and add 1 tbs ketchup if it needs a little more moisture.

Transfer into 6 mini loaves (prepared with cooking spray). Bake at 350 for 20 min.

Remove from the oven and top each loaf with your piquant sauce.

To make the sauce combine:
1/3 cup ketchup
2 tsp honey
2 tsp mustard
2 dashes soy sauce
2 dashes hot sauce

Bake the meatloaves with the sauce for another 10 min!

They will be devoured and you will feel great about eating them! Enjoy!!
