In my opinion, this is the only way to eat beets on a regular basis.
Eating too many beets can result in oxalate toxicity because beets are high in oxalic acid.
Fermenting beets breaks down oxalic acid so that it does not get stored in your tissues. When it is stored in your tissues, your body cannot detoxify it or eliminate the excess. So you begin to have symptoms that you don't want.
By using wild fermentation, our beets will have very low, if any, oxalic acid content.
