What is a food-contact-surface?
Non-food-contact surfaces must be designed, constructed, and maintained in a way that prevents contamination of food and ensures cleanliness.
In practical terms, this means they should be:
Smooth and non-absorbent, so dirt and bacteria can’t accumulate.
Durable and easy to clean, allowing for regular sanitation without damage.
Free from cracks, chips, or corrosion, which can harbor microorganisms.
Properly maintained, ensuring they don’t flake, peel, or shed particles that could contaminate food or food-contact surfaces.
Essentially, even though these surfaces don’t directly touch food, they still play a crucial role in maintaining overall hygiene and preventing indirect contamination in food-handling environments.

✨🎉 WOW… What a Way to End the Year at the Hilligoss’s! 🎉✨

Ringing in the New Year the only way we know how—with an unforgettable spread and a whole lot of love on the table.

From a fully loaded charcuterie and grazing board featuring:
🥩 Hand-carved roast ham & cured meats
🧀 A curated selection of cheeses (soft, sharp & everything in between)
🥕 Fresh-cut vegetables with house dips & accompaniments
🍇 Seasonal fruits, olives, nuts & bold textures
🥚 Classic deviled eggs done right
🥒 Pickled bites, chips, crackers & crunch for days

This wasn’t just food… it was an experience.
Layered flavors, balanced colors, thoughtful flow—every inch designed for sharing, grazing, and celebrating together.

🥂 Here’s to closing out the year full, grateful, and surrounded by good people.
Bring on 2026—let’s eat.

When to reject frozen chicken ❄️
When receiving a delivery, ServeSafe requires food handlers to inspect frozen poultry at once.
You should reject frozen chicken if you find any of the following:
🚫 1. Large or Excessive Ice Crystals
Ice buildup shows the product has thawed and refrozen, which means temperature abuse. This can compromise both quality and safety.
🚫 2. Fluids or Blood in the Bottom of the Package
This is a sign that the chicken has started to thaw during transport.
🚫 3. Frozen Chicken with Discoloration
Gray, white-dried patches, or extremely pale spots suggest freezer burn.
While not always dangerous, it means poor quality and improper storage.
🚫 4. Packaging That Is Damaged, Torn, or Open
If the seal is broken, contamination risk is high. Reject at once.
🚫 5. Product Temperature Above 0°F (-18°C)
Frozen foods must be delivered fully solid and frozen.
Softness or any thawing means the product has been temperature abused.
