Chocolate Cake Layers

1 ¾ cups all-purpose flour

¾ cup cocoa powder

1 ½ cups sugar

1 ½ tsp baking powder

1 ½ tsp baking soda

½ tsp salt

2 eggs

1 cup buttermilk

½ cup vegetable oil

2 tsp vanilla extract

1 cup hot coffee (or hot water)

Pistachio Crunch Layer

1 cup roasted pistachios (roughly chopped)

½ cup white chocolate, melted

1 tbsp butter

Pinch of salt

Pistachio Cream Filling

1 cup heavy cream

½ cup mascarpone or cream cheese

½ cup pistachio paste

¼ cup powdered sugar

½ tsp vanilla

Chocolate Ganache

1 cup dark chocolate chips

¾ cup heavy cream

1 tbsp butter (for shine)

Decoration

Crushed pistachios

Whole pistachios

Gold leaf (optional for Dubai-style finish)

🧁 Instructions
1. Make the Chocolate Cake

Preheat oven to 350°F (180°C).

Mix flour, cocoa, sugar, baking powder, baking soda, and salt.

Add eggs, buttermilk, oil, and vanilla; whisk until combined.

Pour in hot coffee and mix until smooth (batter will be thin).

Divide into two 8-inch pans.

Bake 28–32 minutes, cool completely.

2. Make the Pistachio Crunch Layer

Melt white chocolate and butter.

Stir in chopped pistachios and salt.

Spread the mixture on parchment and chill until firm.

Break into small crunchy pieces.

3. Make the Pistachio Cream Filling

Whip heavy cream until thick.

Add mascarpone, pistachio paste, powdered sugar, and vanilla.

Beat until smooth and fluffy.

Fold in some pistachio crunch if desired.

4. Make the Chocolate Ganache

Heat cream until steaming.

Pour over chocolate chips; rest 2 minutes.

Stir smooth, add butter, cool slightly.

5. Assemble

Place cake layer #1.

Spread pistachio cream generously.

Sprinkle crunchy pistachio pieces.

Add cake layer #2.

Pour warm chocolate ganache over the top.

Decorate with crushed pistachios and gold leaf.

6. Chill & Serve

Refrigerate 1 hour for clean slicing.

Serve cool for the richest texture.
