This past weekend, I was given The Paragon Coin.
This coin represents my every day goal. Every day is a new opportunity to pursue excellence. Excellence in motherhood, athletics and dietetics. I feel like some days I just survive while other days I am actually conquering the day. When Mark shook my hand at the team party, I felt overwhelmed, speechless and validated.
This coin helps me feel heard, seen, appreciated and believed in. While this may seem silly, small acts of acknowledgment like this coin from Mark remind me that I am not alone in this “pursuit of excellence” journey. I appreciate and my team of friends at Paragon.
🎄Merry Christmas and happy training! 🎄

Once winter rolls around and temperatures drop, your body’s needs shift. The big question becomes: Does cold weather change your nutrition strategy?
The answer: yes… and no.
Read this week's blog to hear advice Registered Dietician, Krista Neugebaur, has for athletes ❄️🍎.
Here’s a family favorite from my digital cookbook! Enjoy!
I added grilled chicken and some spinach as well last night.

Oh no! That feeling of being under fueled for a run is not something I normally struggle with…😳
This was a different story with factors I had not anticipated. I helped in a cooking class at my kids school and had planned on running on the track right after, but there was a PE class on the track. I had the whole morning planned and it all shifted about 2 hours later. That put me in the hole for calories and hydration going into the run. I had not brought enough sports nutrition to be hours behind on my fueling…..
About halfway into the run, all I was craving was an ice cold coke. I never crave coke unless I’m racing. So, my body was obviously sending me signals about halfway through the session. Finished up the run, refueled and rehydrated. It took about an hour for me to feel normal again.
Today was a good lesson for me and hopefully a reminder to y’all that you can have a plan and sometimes you have to shift. Being under fueled for training completely impacted my ability to hit pace goals. I would rather be a bit over fueled for a session then be under!

I am a triathlete, new mom and Registered Dietitian (nutritionist).
I am a wife, mother and a dog lover. Hanging out with my husband, son and dog, Emma, is my favorite way to spend my days!
Over the years practicing dietetics, I have been able to work with athletes as well as individuals struggling with medical diagnoses such as eating disorders, gastrointestinal disorders, diabetes, cancer, auto-immune diseases and weight management to name a few. I have gained knowledge and expertise in a wide range of nutritional needs. Recommending nutrition therapy based on individual needs is my priority with every single person that I serve.
Ever since I was a little girl, I have always loved running and sports. It was not until my early 20’s that I truly realized how much joy I felt from running. I began with 5K races and worked up to the marathon distance. Once I had completed my first marathon, the Nike Women’s Marathon, triathlon racing became my next adventure. I had dreamed that the Ironman would be my first triathlon…thankfully, after my husband talked some sense into me, we decided to try out a sprint distance triathlon first. Of course we both loved triathlon and two years later we completed Ironman Texas. Training for races of varying distances has helped me understand how to change nutrition for myself as well as other athletes who I have provided nutrition education too.
I have had the pleasure of providing nutrition education to athletic groups and individuals. Athletic groups include Team Diabetes during the San Antonio Rock N’ Roll Marathon training, New Balance Ladies Night Out,Leukemia and Lymphoma - Team in Training, Two Run Zero, Alamo 180, Lululemon Run Club and Orange Theory. Athletes of all specialties have come to me for advice; individuals from middle school, high school, college and elite sports in football, soccer, tennis, cycling, cycle cross, MMA, triathlon, runners and gymnastics to name a few. I have personally learned how to balance health along with work, social and personal life and I love to educate others how to do the same. Balancing these things in a healthy manner is key in preventing illness during high levels of training.
My personal experience in nutrition and fitness allows me to educate and motivate others to better themselves in both areas of life. Whether you are a novice or avid athlete, I am qualified through education and experience to help you reach your goals.
