Is there any nutritional benefit of soaked or sprouted nuts and seeds over raw varieties? To best understand the answer to that question, consider the purpose of most nuts and seeds (grains are seeds, too): they exist to grow into new plants of their specific species. The fuel for this initial growth is the minerals bound up in the seed or nut by phytates. While this is good news for the plant, it’s bad news for us. We lack the enzyme necessary to digest phytates, so the minerals in the nuts and seeds are not able to be absorbed. Phytates also affect the absorption of minerals in a meal eaten with raw nuts or seeds that contain them. For this reason, phytates are referred to as anti-nutrients.
Minerals are essential nutrients. We cannot make them, so we need them from our food. Minerals have a variety of important functions in our bodies. They facilitate enzyme reactions and the transfer of nutrients across cell membranes, help maintain pH balance in the body and proper nerve conduction, contract and relax muscles, regulate tissue growth, and provide structural and functional support.
Additionally, every endocrine gland has a specific mineral on which is it particularly dependent. Lack the mineral and the function of that gland suffers.
Lastly, and of particular interest at this point in time, the white blood cells of our innate and adaptive immune system require adequate zinc. In order to have a robust defense against pathogens, we need to not only eat foods containing zinc, but absorb it.
The good news is that you do not have to eliminate nuts and seeds from your diet in order to avoid phytates. Phytates degrade when the nuts and seeds are sprouted or soaked, making them both easier to digest and the minerals more bioavailable. Soaking and sprouting are traditional methods of food preparation that have been lost in our industrialized food system. However, products like those in the photo are now more readily available.
