Safe - Eat: 8 - 12 ounces per week

During summer we grill and cook a lot of meat.
In order to avoid under-cooking your meat and avoiding food-bourne illness, you can follow these temperature guiddlines for cooking different types of meat. Simply use a meat thermometer and insert it into the place closest to the bone, or in the biggest portion of the meat.
Beef, veal, pork, lamb: 63°C (allow to rest 3 minutes before carving or eating)
Poultry: 74°C
Ground beef, veal, pork, lamb: 72°C
Fin fish: 63°C or until opaque flesh flakes with a fork

Another key tip:
Don’t cross-contaminate. Use clean cutting boards and utensils when handling fresh produce. If possible, use one clean cutting board and knife for fresh produce and a separate one for raw meat, poultry, and seafood.

Summer means fruit, and lots of it! You can try some of these simple smoothie recipes. All you need is fruit (and maybe some vegetables), some liquid (milk, juice or water) and a blender! To add sweetness, try adding a tablespoon of honey instead of sugar.

Strawberry peach smoothie
Blend together:
1 cup frozen strawberries
1/2 cup frozen peach slices
11/2 cups apple juice
ice (as needed)

Strawberry Banana smoothie
Blend together:
1 cup milk
1 banana
10 frozen strawberries
2 tbsps honey
ice (as needed)

Orange banana smoothie
Blend together:
1 cup orange juice
1/2 orange
1/2 cup bananas
3/4 cup carrots
1/2 cup yogurt or milk
1 tbsp honey
ice (as needed)

The Purple Power Up Smoothie
Blend together in this order:
1/4 cup yogurt (plain or vanilla)
1/4 cup milk (soy, almond,coconut or regular)
1/2 small banana, frozen

Colas and other sweetened beverages are ever popular in Ukraine. However, recent research has added to the lump of evidence that substituting sugar-sweetened beverages for other beverages without added sugars is associated with long-term lower energy intake and lower weight gain. Good options instead are water, milk, tea, coffee and %100 fruit juice.

A dietitian's advice: skip the colas and drink a glass of plain water before all your meals, and drink water throughout your meal to help keep you hydrated and feeling satisfied.

Finding a healthy lunch option during the work days is hard. In Kyiv there are not many healthy options at restaurants, and many of us find it easier to turn to a carbohydrate based meal which is quick and cheap, such as "Bulochki" or other breads, Scharma, etc. If this is your struggle, you can try some of the tips below:

1. Pack a lunch to go - this is the best way to ensure that your lunch will be healthy, because you can control what you have cooked for yourself. You can try a sandwich on brown bread with mustard, cheese slices, chicken breast, cucumber slices and lettuce leaves. You can also pack food that was leftover from dinner the night before in a leak-proof container and store it in the refrigerator at work, or in a cooler bag.

2. Visit the grocery store - There are healthy and unhealthy options in many Produkti shops and large grocery stores. Take a piece of fruit, a small bottle of Kefir, yogurt or milk, a quarter of a loaf of brown bread and 100 g of cheese. A few simple products can make a well-rounded and healthy meal.

3. Order ahead - Many restaurants allow their customers to call ahead to place the order. If you don't have time to sit down to eat or go somewhere, this may be the best option for you. When ordering from a restaurant though, stick with dishes like salads and sandwiches with lots of vegetables. In general pasta dishes with heavy cream sauces should be avoided if you are trying to manage your weight.
