I am experiencing lots of technical issues with your podcasts. Not sure why but thought I would let you know.
So I've been doing Keto for 1 year and 5 months now and do CrossFit 5-6 days a week minimum. I just had labs done and need some advice/guidance. Dr. Gustin I know you are super busy, but if you have time can you look at this please?

Here are my results and comments from my Doctor.
Your kidney function, electrolytes, and liver function are within normal limits.
Your protein and globulin ratio in your blood was mildly elevated and would like to further evaluate this with a return to the lab for other testing. This could also be from medications.
Your LDL (bad cholesterol) is elevated. This is a risk factor for heart disease and stroke. Would recommend heart healthy low cholesterol diet, exercise and initiation of Pravastatin 40mg daily at this time. We will recheck this in 6 mos after these interventions and if it remains elevated may need to discuss other options. Return to the lab at that time fasting and an order will be available.

🔥 One thing that certainly stuck after my time with the Hadza is the desire to cook every single thing I eat over coals cooked down from actual wood.

Cooking with fire is one of the most meditative, communal, delicious, and primally satisfying things you can do. It's an antidote for the zoo.

You have to be outside, generally with people, patient, use all of your senses, let go of control, and off your devices. It's less convenient, and that's the whole point.

I'm going to be learning as much as I can about open fire cooking over the next few months. To cook the best meals possible, but also see how I can use it to reconnect with nature.

Anyone interested in what I dig up? 🙋🏻‍♂️

P.S. the @barebonesliving cowboy grill has been a hell of a tool 👍

This is lung tissue from pigs. On the right, the pigs ate a diet with 40% palmitic acid (saturated fat). On the left, they ate only linoleic acid (the terrible fatty acid in refined vegetable/seed oils). They were infused with an endotoxin, then killed to observe their tissues. Notice a bit of a difference?

How many people over the last year that went to the hospital for extreme COVID symptoms, generally of the respiratory system, were given high amounts of vegetable oils in either their hospital food or this exact formula (IntraLipid) given to the pigs? I’d wager 99%+.

How many people eat massive amounts of linoleic acid daily, hidden in restaurant food, sauces, condiments, food products, nuts, seed, chicken, pork, and don’t even know it? I’d wager 99%+.

Refined seed oils and foods high in PUFA remain in my mind as the primary reason why so many people are fat and sick. This (hopefully) will be the next huge push in nutritional science.

Many of you have reached out over IG stories showing the Santa Monica location of @belcampomeatco carrying and selling commercially farmed animal products.

I’ve chatted with their founder @anyafernald and she is as surprised as anyone else and looking into the extent of the matter so full and swift actions can be taken and will open up when she has all of the information needed. She's a phenomenal human and I trust she's being fully honest.

No, this doesn’t look good, but we don’t know the full extent of it. Let’s reserve dishing out harsh public admonishments and wait for the full transparency of what happened and what will happen moving forward.

Belcampo has been pushing regenerative to the masses for almost a decade now, and even if the worst is true, we’d all be better off encouraging them to improve their sourcing, standards, and transparency over division and public shaming.

If we care about regenerative ag and better meat sources, we need to work together. This highlights one of the most important problems in this movement: competition over coordination. While these reports fall far below regenerative standards, a huge problem is not having an agreed upon standard.

There are many differing opinions of what classifies as “regenerative” or not. @forceofnaturemeats is doing a phenomenal job leading here trying to create a standard and helping farms hold those standards, but there’s still tons of confusion and disagreement. My hope is that when @belcampomeatco fixes their issues, it can work with other companies on what could eventually be an agreed upon definition of what “regenerative” or not. One can hope!

Open fire cooking for breakfast? Why not 🤤 People keep asking me what I've changed in my life after Africa and an unexpected shift is wanting to cook every meal I can over a live fire.

There's nothing more human than hunting, butchering, starting a fire, and cooking your food over open flames with other people. I'm convinced open fire cooking will be a big next "health" trend.

Food tastes better cooked on wood, but also has a lot to teach you. You have to work with nature, not dominate it. Something the vegans with dainty and clean hands who have never seen where food comes from don't realize.

For now I'm cooking over grates on @barebonesliving cowboy grill or using lump charcoal on my @pkgrills and eagerly awaiting our farm renovation so @mill.scale can make us a custom open fire cooking oasis.

Don't have time or not cooking enough to burn down a few logs of wood? Throw some lump charcoal in a charcoal starter. Work with the coals, get immersed in your food, and enjoy life outside the zoo cage.

Do you know what is making people the most sick? It's not sugar, carbs, or grains. It is refined oils that come from sources that aren't fatty.

Leftover seeds from industrial processes that are machines and forced with chemicals in factories to squeak out fat. It takes 4000 soybeans to make one teaspoon of soybean oil!

This leads to sky high levels of linoleic acid, a fatty acid that wreaks havoc on the human body.

Eat your fat from foods that have a naturally fatty flesh. You can literally do this by looking at the label. Even "vegetable" oil should be a good filter because vegetables are fibrous, not fatty. If you don't know if the thing is fatty or not, or what is (wtf is a rapeseed?) then should you be eating it anyway?

Food with the Hadza.

🍖 Animal products are unquestionably the center of their diets, and would be more if their access to hunting large game wasn't being rapidly diminished. They absolutely eat nose to tail. Literally not a single bit goes uneaten by either the tribe or the dogs. They cook all the animal food, and the organs go on the fire and are eaten first. The ladies and children make soup out of inedible scraps. Hunting permeates their culture and is undeniably the most important activity and priority.

🍠 There really isn't much to "gather." They snack on baobab fruit, which is incredible. These tiny orange berries were delicious, but really sticky, and moderately poisonous. Paul and I both got sick eating too many. Tubers are dug out of the ground. You rip the skin off, chew the flesh, then spit it out.

🍯 Honey is the only thing I saw them eat ravenously. I've never tasted anything like that before, chewing through larvae and bodies of bees with honey oozing everywhere.

💩 Fiber consumption is essentially nonexistent. These people are known to have some of the most enviable microbiomes in the world. How? They live outside, eat with their dirty hands and clearly never wash them, drink "dirty" water, and are probably being exposed to natural microbes constantly. I'll say it again: fiber is overrated.

🔥 They eat slow, cook everything over an open fire, and share. They rarely ask for food, and wait until it is offered to them. Even though they were clearly hungry at times, they were calm and didn't ravage their environment around them extracting everything they could. Clear abundance views.

🌽 Unfortunately, because their access to game is diminishing, they have to supplement with eating ugali, a corn meal sludge gifted to them by the local missionaries. If changes by the government aren't made soon, they will have to resort to primary source of food from ugali.

🧂 No spices, herbs, salt (other than what I gave them which they loved), pepper, plates, forks, or knives.

(Yes, @carnivoremd and I ate every bit we were offered, including baboon brains and goat blood and organ stew.)

Went on an 11 hour hunt with the Hadza tribe today. Insane experience.

We stumbled upon a bee hive up in a tree, started a fire with sticks in about 30 seconds to smoke the bees out, and one of the guys climbed up and ripped about 12 combs out and threw them down to us.

It was one of the most amazing things I've eaten. Bee larvae still crawling around in my mouth when I was chewing.

More intense info coming soon, like how we killed that baboon and how we cooked it.

Our food system is not normal. Even when people eat “real food” we still have real problems.
�As we’re preparing our farm ( @joyfieldfarm ), I’ve been digging deep into chickens, why they are so high in linoleic acid (the same PUFA that makes seed oils so toxic), and have unearthed some scary truths.

We’ve selectively bred chickens to grow as fast as possible on mono crop subsidies of corn and soy that are largely unfit for human consumption. Yes, even 99% of all “pasture” raised chickens are still being fed corn and soy and grow this fast.

The chickens on the left were probably eating far more of a species appropriate diet, thus look like a normal bird and had much better levels of nutrition.

The chicken on the right had genetics passed on that allowed it to eat buckets full of corn and soy and grow this sickly large within 40 days containing high levels of PUFA and low digestibility of protein, as well as terrible (or absent) taste.

I’m going to be testing how to grow chickens to more species appropriate levels but fully understand the hardest part is going to be retraining people to expect a much different end product. Most people won’t give a s**t, but those who care about their health, the environment, and ethics will.
