Creamy, spicy butternut chicken curry is on the menu for tonight! On a brisk day like this, I just want to curl up on the couch with a bowl of something hot.

This curry is super easy, done on stove top while roasting butternut on the oven. It uses simple ingredients like curry powder salsa, and fresh ginger for the spice, and Kite Hill dairy-free yogurt for the creamy sauce. Love making this during the week so we have leftovers for lunch and serve it with cauliflower rice for a low carb, Paleo dish 🙌🏻
