Happy Lunar New Year! It is officially the year of the tiger 🐯⻁

May the new year bring you prosperity and good health! Gung Hay Fat Choy 🧧 🍊

This picture features dried and sweetened fruits. Tangerines that are still on the stem (it’s important to not break these apart!) and sweet fried dumplings filled with coconut flakes, peanuts, and sesame seeds. My bokksu box finally arrived in the mail today! As you open your box, you are greeted by a thank you note and a culture guide magazine that describes each product’s origin, flavors, and even common allergens! As a Registered Dietitian, I really appreciate how common allergens are listed. Living in the US, we may not be as familiar to other culture’s foods but the culture guide can help us understand their snacks and it also gives us a sense of ease knowing what exactly is in the snacks!

The first thing that I tried was the freeze dried strawberry infused with white chocolate. It’s nothing that I’ve ever had before. It tasted like strawberry chocolate. I guess the shape of this product really threw me off!

The seaweed tempura was very interesting as well. It was so fresh and crunchy with a strong kick of citrus. Again, this is nothing I’ve ever had before.

I ended my sample of the day with a cup of Japanese green tea. It was the perfect drink to pair with the snacks.

I’m excited to go through my other snacks including the uni flavored crackers!!

Beet Lattes from my local coffee shop are amazing!!
Did you know that beets are full of phytochemicals? It has phytosterols which may lower blood cholesterol levels. The red color in beets are due to betanin which serves as an antioxidant and has anti-inflammatory properties. It also contains inorganic nitrates which may help with exercise!

Spring rolls are one of my favorite lunch options in for the spring and summer seasons. The rolls are light and filled with your choice or protein and different veggies such as lettuce, cucumber, bean sprouts, carrots, or mint/ basil. You can pair it with your favorite dipping sauce such as a peanut sauce or fish sauce.
My protein of choice is either shrimp or grilled pork.

Fried foods?! 🍟

As a Registered Dietitian, I often get asked if fried foods are okay to eat. Typically, if you’re only having it less than once a week, it should be fine! If you’re craving it, go ahead and eat it.

My sister often craves for dino chicken nuggets. Our household would also have one bag of chicken nuggets in our freezer at all times. Here is how I build her plate to include additional nutrients.

1. Air fry/ use conventional oven to reheat the nuggets. This will help give you the crispiness without anymore added oils. I would typically blot them afterwards as well.

2. Include a side of vegetables! If you’re having fried foods as part of your main meal, remember to include your veggies! Romanesco is her favorite. I usually roast or sauté them in olive oil with some seasonings and aromatics.

3. Carbohydrate. The breading on the fried foods is usually a source of carbohydrates but it has virtually 0 fiber! I wanted to make this meal higher in fiber and other great nutrients by adding potatoes. The skin on the potatoes contains fiber which will help keep you full for longer

4. Customization! Lastly, she needs ketchup with her chicken nuggets. Choose a condiment with few ingredients. The ingredient names should also be something you’re familiar with! Try to eliminate the unnecessary additives if you’re able to!

I joined the Forager Project RD community and got to try their dairy free probiotic cashew milk yogurt. 🥭🍦

This is a great alternative for anyone who is lactose intolerant. I usually steer clear of cashew milk because it is not as creamy as cow’s milk, however, this dairy free alternative did not disappoint! It had sweet notes of mango blended with creamy coconut and cashew milk. Very delicious alternative! Not to mention it contains 1 billion probiotic CFUs per serving.

Fody Food Co.’s dark chocolate, nuts & sea salt bar is the perfect snack for the trail! It has the perfect balance of energy from protein, carbohydrates, and fats. ⚡️

Did I also mention that it is gut friendly? These bars are lactose and gluten free. Perfect for trails with minimal restroom access! 🥾

Thank you SunButter Sunflower Butter for sending some delicious sun butter samples! 🌻🌼

I used SunButter Sunflower Butter organic sunflower butter to make these delicious cookies. This sunflower butter is made from organic roasted sunflower seeds without any added sugar or salt! It is also free from the top 8 common allergens!

Fun fact: did you know that the chlorophyll in the sunflower seeds will react with baking soda or baking powder when baked? The result is green colored baked goods! It’s a simple reaction that is harmless to ingest. This is a natural way to turn your Halloween cookies green!! 🎃

Unfortunately, my cookies didn’t turn green. I’ll have to work on my acid- base balance!
