CHILI !

& this ones not ya average chili. It's better. More enchilada like flavors & that makes my taste buds happy.

Let me show ya how to make the chili -
🤤Heat the olive oil in a large pan over medium heat.
🤤Add 1 chopped onion and cook until softened.
🤤Next, add in 1lb grass fed ground beef, s+p and break up with a wooden spoon.
🤤Cook the meat through, then add in a couple of minced garlic cloves & heat until fragrant.
🤤Then, add in 2 tbsp taco seasoning and toast it up, again until you can smell the goodness.
🤤Finally, toss in 15ish oz homemade or store-bought enchilada sauce, 1 cup fire roasted corn, a can of black beans (or any beans you like,) and cooked bell pepper (frozen works great.)
🤤Let this simmer away for as long as you can stand it. The chili will be good day 1, amazing day 2-3.
➡️ feel free to us Turkey burger instead of ground beef. I've also added in sweet potatoes or butternut squash and it's been just, *chefs kiss* !

I doubled the recipe & put half in the freezer for John & I postpartum. We're already excited for when we can pop it open once baby girl is here.

ROASTED FENNEL

a favorite side dish of mine. When roasted, fennel gets caramelized and adapts to this sweet, savory & tender veggie. It's so simple to make!

Here's how:
🤤preheat oven to 400F
🤤remove stalks & fawns, then slice fennel into even .5 inch thick slices
🤤toss fennel in EVOO, s+p
🤤arrange slices on baking sheet evenly & do not overlap
🤤bake 30 mins, flipping halfway. It should be browned and tender
* so good tossed in fresh minced garlic while still warm as well!

Fennel is so underrated and ya gotta give this recipe a go. It's too easy not too.

HERBY SALAD w a MEYER LEMON VINAIGRETTE - a Dad's Luncheonette] side

If you live in the Bay Area, DROP EVERYTHING & go to Dads.
John & I have been trying to get takeout from our favorite small local restaurants & Dads we LOVEEEE you.

Dad's Luncheonette] is run out of a little train car by a ‘Dad’ who previously worked as a Michelin star chef at a very fancy restaurant. He took what he learned there & opted for the simple life with this chill operation with literally the best food ever.

We always order the mushroom burger with an egg, this HERBY SALAD, and whatever the special is.
We enjoy it in the bed of our truck and it makes us the happiest lil clams.

Support local and eat goooood.

thoughts become your reality 🤙🏼

I had a 34 week DR appointment yesterday and was chatting with my OB about how I wasn't sure how I'd do with an epidural, whether or not I could handle pain of birth & how I can best prepare for the big day.

His response surprised me.

Dr.H said -
"if you think you'll do great, you'll do great. If you think only about the pain, it'll get to you. Life *& giving birth* is all about attitude. Stay positive, tell yourself you've got this & you can do anything you set your mind to."

I've always believed this, and hearing it from a MD in regards to pain medicine solidified it a little extra.

It's alllll about attitude, it's about your outlook, it's about what you tell yourself.
I'll be repeating this over and over in my head a little extra in these final days.

Pregnancy is wild, guys...& then again, so is life!

CARROT FRIES 🥕🍟

Ok I make these alll the time for family meal. They're a carrot, but in dry form. They're roasted for a while which brings out the sweetness & flavor. MAKE THEM STAT!

Here's how:
🤤preheat oven to 420F
🤤cut carrots (no need to peel) into fry size sticks & toss with EVOO, s+p
🤤bake for 25 mins, flipping halfway
---> serve with any dip you'd like and enjoy!
Also soo good with cumin, or other seasonings to flavor em up

TURKEY + PICKLE ROLL UPS

I've been eating this nonstop. Literally, can't get enough.

Protein packed, light & yet sooo satisfying, this is an ideal snack when you need something quick & filling. My go to used to always be protein bars because of the convenience & taste, but I ran out a month ago and never looked back!

At any time in life (for me pregnancy!) protein is a top priority. It'll stabilize your blood sugar, give you some of the macronutrients you need & keeps you fuller, longer.

Not fancy, and yet one of my favorite ideas, the turkey pickle roll up is my new fave.
Here's my variation, but feel free to get creative!
🤤grab a slice of organic, high quality turkey, add some greens, a dill pickle, mustard, black pepper + hot sauce & roll that baby up! ...Lol, that's it....

Talk about a healthy pregnancy craving, am I right???

AVOCADO RANCH CREMA

We love dips, spread and sauces in this house. I often throw whatever I have in my fridge/pantry together & see what works..... THIS WORKED. It's a much healthier version than ranch and hits all the spots.

Here's how you make it:
🤤add the following to a blender, food processor or bowl -
1 whole ripe avocado, 1/4 cup organic plain greek yogurt, 1/4 cup good organic buttermilk, 5 chopped garlic cloves, 1/4 cup champagne vinegar + ranch herbs (parsley, dill, chives, etc)
🤤blend or blitz up until creamy
* This'll last about 4 days refrigerated, or freeze for a couple months
* Can also use premade ranch packets or herb blends

We dipped carrots in this, put it on turkey sammys & even dipped buffalo wings in this. The possibilities are endless and it's incredible to have on hand in your fridge.

We love an avocado moment, don't we?

Food Pairings for *OPTIMAL* Nutrient Absorption - SEE WHY + HOW BELOW

Understanding which foods pair together will allow us to absorb more nutrients in our body. The bioavailability of nutrients is influenced by our food pairings, how you cook your food + your genes. When you add certain ingredients together (many of which taste so much better together,) these combos increase our ability to fully utilize the available nutrients.

——
GREENS + HEALTHY FATS
Your body is not able to absorb all of the wonderful nutrients from your greens without healthy fats by their side!
HOW? Add in nuts or an avocado to your greens smoothie. Making a salad drizzled it with EVOO.

BERRIES + WHOLE GRAINS
Pairing berries with whole grains increases absorption of their respective nutrients significantly. Berries have a large amount of water, fiber and Vitamin C, while grains have B vitamins, iron and fiber. The complimenting nutrients in these foods aid digestion and lower blood pressure.
HOW? Make a toast with whole grain bread, almond butter + smashed raspberries.

LEMONS + GREENS
Greens contain a lot of the vital nutrient iron, which is commonly not absorbed properly. Vitamin C, which is extremely high in lemons, helps with the absorption of iron in our bodies.
HOW? Add a sq**rt of lemon on your salad or sautéed greens.

MUSHROOMS + HEALTHY FATS
Did you know there are what’s called ‘fat soluble vitamins,’ which are Vitamins A, D, E, & K. These vitamins need fat to absorb in our body. Mushrooms are high in Vitamin D, so must be paired with a fat in order to reap the benefits.
HOW? Sauté mushrooms with good EVOO + grass fed butter.

TOMATOES + HEALTHY FATS (cooked tomatoes are best here!)
‘maters are high in lycopene (a carotenoid,) which is one of the most potent antioxidants. This antioxidant is enhanced + more easily absorbed in tomatoes when cooked & combined with healthy fats.
HOW? Make a tomato sauce *bonus points if you add in greens to this too.

The cool thing is, these nutrient pairings taste delicious & I'd rather eat them this way anyways! Wouldn't you??

Mexican street corn *off* the cob 🌽

You already know I love my fresh bright flavors & this one hits the spot. Whether you make it as a dip or a side dish, it's a crowd pleaser.

Go grab summers last bits of fresh corn and have at it! Here's how:
🤤broil (or grill) 5 ears of corn that's been brushed with lots of lime juice until charred, then cut the corn off the cob & allow to cool
🤤meanwhile, combine the zest + juices of 3 limes with 2 tbsp homemade mayo, 5 cloves minced garlic & 2 tsp each of smoked paprika & cayenne.
🤤in a bowl, combine the corn with 4 tbsp chopped cilantro, 6 tbsp briney cheese & the dressing above. Let it marinade 30+ mins
🤤place in a serving dish, top with more briney cheese & extra cilantro for garnish
👉🏼serve as a side or with chips as a dip!
*can also use a bag of frozen corn instead of fresh.

Mmmm corn. We love it.

FAMILY MEAL.

Something organic happened in the past year, and it's not just the ingredients I use cooking. This little side hustle of mine has been sooo fun for me and I've been told it's fun for many of you to watch my journey.

Each Tuesday & Thursday, I offer 'Family Meal' to a growing group of busy households around the San Mateo area. I send out the menu the Friday before & they let me know if they're in for either day the following week.
I create seasonal meals using quality ingredients that inspire me in the kitchen. I make sauces, dressings, marinades (& ya, ok, everything) from scratch - the way your great grandma did it.
Cooking is my meditation & sharing what I love with grateful families makes me the happiest.
