We eat this bread every day for lunch (next to our salads) and the kids love it! 🌱
Two ingredients. No flour, no yeast, no gums. Just whole buckwheat groats + water — soaked overnight, blended, and baked.
That’s it. And it’s genuinely one of the best things we eat every week.
Here’s why buckwheat is so special: it’s not actually a grain — it’s a mineral-rich seed that’s naturally gluten-free, high in plant protein, and packed with magnesium, zinc, and an antioxidant called rutin that supports circulation. It digests easily and keeps you full for hours.
We always bake a loaf, slice it, freeze it, and toast pieces through the week. Our favourite way to eat it right now: smashed avocado with a teaspoon of Daily Greens mixed in. Simple. Nourishing. Delicious.
