March is right around the corner and that means it’s National Nutrition Month! There’s no better way to celebrate than to try this tasty and nutritious VERY GREEN smoothie recipe...creamy and delish😋!!

* 1 handful kale
* 1 handful spinach leaves
* 1 handful parsley
* 1/3 cucumber, sliced
* 1/2 apple, quartered
* 1/2 avocado, peeled and seeded
* 1 cup pure water or unsweetened nut milk (almond, cashew, coconut)
* 1 tsp organic honey (optional)
* 1 Tbs sliced almonds

Use high-powered blender like Vitamix, Blendtec or NutriBullet.
Blend all ingredients in blender for 60-90 seconds or until smooth.
Pour into large glass and sprinkle with sliced almonds.

Love fried rice, but don’t want the carbs? Try this satisfying and delicious cauliflower fried rice recipe. You can always add your favorite protein to the mix (chopped chicken, steak, or even salmon!).

Ingredients:

4 cups cauliflower rice

2 medium-sized carrots, chopped

3 cloves garlic, finely chopped

1 cup peas

1 medium yellow onion, chopped

2 eggs scrambled

3 Tbs tamari sauce

3 Tbs sesame oil

Dash of red pepper flakes

1 small bunch green onions, chopped

Instructions:

Brown cauliflower rice in large heated skillet with 1 Tbs sesame oil. Set aside.

Lightly brown carrots and yellow onion together in 1 Tbs sesame oil. Set aside

Lightly cook chopped garlic and peas together in skillet with remainder of sesame oil

Scramble eggs in skillet and break into pieces

Combine all ingredients in pan. Add tamari sauce (you can also add a little more sesame oil, if needed).

Sprinkle chopped green onions on top

I’m sure most of you have heard or know about the health benefits of omega 3 fats. Omega 3’s are essential and necessary fats that are responsible for controlling inflammation throughout the body, especially the heart. Many Americans are deficient in omega 3 fats and don’t even realize it. There are even those people who are taking these as supplements but not absorbing or utilizing them.

. ***** Please note, AVOID Omega 6 oils (corn, vegetable, canola, sunflower, safflower)!! These types of oils promote inflammation and are unstable when cooking at higher temperatures. *****

There are both animal & plant sources of omega 3 fats. Among Omega 3’s, several exist: (EPA, DHA & ALA). EPA & DHA can be made from ALA but the process isn’t so efficient and is dependent on delta-6-desaturase. Many studies conclude that individuals with low concentrations of EPA & DHA have an increased risk of death from ALL causes, including accelerated cognitive decline.

‼️‼️If you haven’t heard about delta-6️⃣-desaturase please pay attention? Delta-6-dehydrase is an enzyme that when IMPAIRED causes chronic inflammation (root cause of chronic disease) and accelerated aging‼️‼️‼️‼️‼️

** Animal sources: fish 🐟 , krill (EPA/DHA) **

.
** Plant sources: flax, hemp, chia (ALA)
algae (EPA/DHA) 🌱 Plant sources typically are in the ALA form vs EPA and DHA forms. Keep in mind: Plant-based omega-3 sources like flax, hemp & chia seeds are high in ALA, but low in EPA & DHA (the most crucial form). Although ALA is an essential nutrient, the key point to remember is that the conversion of ALA to the far more essential EPA & DHA is typically inhibited by an impaired delta-6-desaturase, an enzyme necessary for you to convert the ALA into the longer chain EPA and DHA.

What can impair delta-6-desaturase?:
1. Alcohol
2. Radiation
3. Toxins
4. Excessive Omega 6 fat intake
5. Micronutrient deficiencies
