Ingredients (makes 16 muffins or 32 mini muffins)
2 tbsp Ground Flax Seeds (or 1 egg)
5 tbsp Water (not needed if using egg)
1 ¾ cup oat flour (can be made by blending oats)
¼ cup rolled oats
¼ tsp salt
1 ½ tsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg
½ cup mashed banana
2 tbsp Nonfat Plain Greek Yogurt
1 cup any milk
1 cup grated carrots
¼ cup crushed walnuts
¼ cup Healthy Geek Lucuma Powder
Directions
Preheat oven to 400 degrees F. Lightly grease a muffin pan
In a small mixing bowl, stir the ground flax and water and let it sit for at least 5 minutes. (Skip if using an egg)
Add oat flour, oats, baking powder, cinnamon, nutmeg, salt and Lucuma Powder to a bowl and mix. Whisk together.
In a separate bowl mix the flax mixture (or egg), mashed banana, yogurt, milk, and vanilla. Whisk together.
Add wet mixture into dry mixture and stir to create a consistent batter.
Fold in the carrots, and crushed walnuts.
Pour batter into muffin pan.
Bake for 15-17 minutes until sticking a toothpick into the middle of a muffin comes out clean.
Let the muffins cool in the pan for about 10-15 minutes and then enjoy!
