Breakfast this morning was a leftover slice of dill pickle focaccia, cheddar cheese, and an avocado that was on its last day. I'm not into food waste, so I eat whatever needs to be eaten every day.
I wasn't always this way, though.
I come from a large family where there were no real leftovers. We were hungry, athletic, teens and kids who ate all the dinner (as fast as we could) and then raided the pantry every night. (Trust me when I say we had PLENTY of food, we also just all ate like linebackers).
When I got to college, with roommates, and made too much food for myself, I threw the remainder in the trash. One of my roommates asked why I didn't just save the leftovers and I said, "I didn't realize you could save leftovers. We never had leftovers."
After that, I started to think differently about food and waste and thirty years later....my diet is mostly dictated by what needs to be eaten next before it goes bad.
So, here is my dill pickle focaccia avocado cheesy toast. It wasn't my fave, but I'm full. π
Classic Focaccia recipe is on the website, but if you want to make it dill pickle then omit the oregano and basil and add your fave sliced pickles before baking. It's great, as long as you don't turn it into avocado toast π
