Sautéed spinach and broccoli, venison sausage, tomato sauce, red bell peppers and parmigiana cheese. Nom.
I name thee, Smoothie Salad! Its everything I love in a smoothie, but in a salad bowl. Spinach, broccoli, strawberries, pecans, chia seeds and lime juice. I confess, I did add olive oil.
Guys! I baked something that isn't tragic!! Really! It's healthy, gluten-free, easy AND scrumpdilyicious. They're crunchy, sweet, filled with protein, iron and magnesium. I'm actually proud of a baked good that I created. It's an amazing feeling. I need a cup of tea and another Peanut butter- Salted Pistachio- Raisin- Oat Bar to celebrate!
1 cup uncooked oats (rolled or quick cooking steel cut)
3/4 cup uncooked quinoa
3/4 cup raisins
1/2 cup salted pistachios
1/3 cup unsweetened shredded coconut
2 Tbl chia seeds
1/2 Natural peanut butter
2/3 cup honey
1 Tbl salted butter
Preheat oven to 350. Spread oats and quinoa on cookie sheet. Bake for 8 minutes. Cool. Transfer to large bowl and add raisins, pistachios and coconut. Blend.
In sauce pan, combine peanut butter and honey. Heat and stir until blended smoothly. Pour mixture over dry ingredients and mix thoroughly. Press mixture into buttered 8 inch glass baking pan. Bake at 350 for 15 minutes, or until gold n brown. Cool completely in dish. Cut into bars and enjoy!
I'm currently baking Peanut butter- Salted Pistachio- Raisin- Oat Bars. If they're as good as my imagination says they are, I'll be sharing photos and a recipe!

Hey there. So, this week has been pretty rough. Well, you know this year has been pretty rough. Feelings are raw and exposed all across America. I've found myself feeling nearly every emotion there is lately and it's been quite overwhelming most of the time. Giving myself permission to feel without judgement has gotten me through these rough days and nights.
Let's please remember to take care of ourselves and others that are feeling hurt and afraid. Let us not judge them for the emotions that are rushing through them right now. Let us hold each other up with strength and love. Let us remember how to be good to each other and good to ourselves.

It makes me so nervous when I see before and after shots of people that have lost gobs of weight in a very short period of time. I LOVE seeing success stories, but losing 30 pounds in a month or two is incredibly hard on the human body. It can lead to severe gallbladder issues and fast weight gain once the diet is over. Rapid weight gain and loss not only effects the gallbladder, it can also be taxing on the heart. Please think twice before jumping in to a "miracle" weight loss program. Slow and steady can be difficult to stick with, but it has lasting results and is MUCH better for you in the long run. Be patient with your body. Xoxo

Today my boys and I ate at The Squirrel and the Bee in Short Hills, NJ. It is a grain-less bakery and cafe. The food is to die for and wonderfully freeing if you are intolerant to grains. I'm planning to do a full review of this fantastic eatery in the future, but for now pictures are worth a thousand words...

This morning I taught a sugar program at my local public library to a group of 4 - 8 year old kids and their parents. It was a good time and I think everyone learned a little something. I only had two sour pusses that didn't enjoy my food samples. Not sweet enough. I'd say it was a good lesson for their moms on how much sugar their kids are use to eating and how natural sweetness tastes to them as a result.
