🍯 Boho Mama’s Gut-Glow Teriyaki Chicken 🌿

🥣 Ingredients (for ~2.5 lb chicken thighs)
🐔 2.54 lb boneless, skinless chicken thighs
🥢 1/3 cup soy sauce
🥥 1 can (13.5 oz) unsweetened coconut milk (Thai Kitchen is perfect)
🍯 2 tbsp honey or brown sugar (optional but helps with teriyaki flavor)
🧄 1 tsp granulated garlic
🫚 1/2 tsp ground cinnamon (warmth + gut support)
✨ 1/2 tsp turmeric
⚫ 1/4 tsp black pepper (boosts turmeric absorption)
🍋 1–2 tsp apple cider vinegar or juice of 1/2 lemon (optional but balances flavor)
🦴 2–3 tbsp collagen peptides (stir in after cooking once warm)
👉 Optional add-ins:
1 cup diced bell peppers or 1 cup pineapple chunks
1 tbsp minced ginger (if you find some later)

🔥 Instant Pot Instructions
1. Add everything except the collagen into your Instant Pot and stir.
(If you’re worried about a burn notice, add ~1/4 cup water or broth.)
2. Pressure Cook:
Set to Manual / Pressure Cook – 15 minutes.
Allow 10-minute natural release, then quick release the rest.
3. Optional: For a thicker sauce, switch to Sauté mode for 5–7 minutes after cooking to let it reduce.
4. Finish: Once the food has cooled a bit (under ~120°F — warm, not boiling), stir in 2–3 tbsp collagen peptides to preserve probiotic and gut-healing benefits.
5. Serve: Over cauliflower rice, brown rice, or veggies for a low-glycemic, lactose-free, healing meal.

💡 Freezer tip: You can toss all the ingredients (except collagen) in a freezer bag now and freeze it raw. Label and cook later for the same result. Just cook 35 min from frozen or 30 min if thawed.
