This week was all about veggies
We made easy Chicken Rainbow Spring Rolls and it was definitely a hit or miss! Some of the kids loved it, and others looked at all those veggies and said “yuck.”

Each week we try something new, explore fresh flavors, and make healthy eating fun. And the best part of it all is seeing the growth of my students their curiosity, their confidence, and their willingness to try again. 🌈🥕🥬🍗

Cozy dinner for the season 🧡

Creamy Butternut Squash Pasta with sautéed kale rich, flavorful, and simple to make.
Make it vegan by swapping ground beef for plant-based sausage 🌱

Recipe:
• Roast butternut squash in olive oil + Paradise Blend for 25 minutes.
• Sear ground beef with turmeric, smoked paprika, salt, pepper, and red pepper flakes. Add minced ginger + fresh sage.
• Remove beef, then sauté onions + garlic in olive oil or butter until translucent.
• Add kale and cook until wilted.
• Blend roasted squash with rosemary, thyme, and a little pasta water for a silky sauce.
• Toss pasta (boiled 2 min less than package) with sauce, beef, and kale.
• Season with salt & pepper to taste.
