Ingredients:
- 500g minced beef
- 15g baking soda
- 15g salt
- 50ml vegetable oil
- 1 white onion, finely chopped
- 1 jalapeño pepper minced
- 2 cloves garlic, finely chopped
- 15g chilli powder
- 15g ground cumin
- 10g dried oregano
- 50g 00 flour
- 450g tomato (fresh or polpa)
- 1 chicken cube (diluted in 300ml warm of water)
- 60ml vegetable oil
- 10 (6- to 7-inch) tortillas
- 250g shredded cheese of your choice (mild cheddar, monterey jack or jalapeño)
Method:
- In a bowl, combine the beef, baking soda, and salt. Mix with your hands until evenly combined, and let it rest for at least 20 minutes.
- Heat the oil in a large non-stick pan over medium heat. Add the meat and cook, breaking it up with a wooden spoon, until browned (about 5 minutes).
- Add the onion, jalapeño pepper, and garlic to the pan and cook, stirring frequently, until the onion is softened (3 to 4 minutes), reduce the heat.
- Add the chilli powder, cumin, oregano, and flour. Cook, stirring constantly, for 1 minute until flour is combined.
- Add the tomato, then gradually pour in the chicken broth, stirring to combine.
- Bring to a simmer until the sauce is thickened (12 to 15 minutes).
- Taste and adjust the seasoning, if necessary. (The sauce may taste a bit spicy, but the cheese will help milden the chilli flavour)
- Preheat the oven to 200° C.
Soften the tortillas either in the microwave or over the hob.
- Microwave: Using a pastry brush, brush both sides of each tortilla with oil, then stack them on a plate and microwave, uncovered, about 1½ minutes.
- Hob: Using a tong, grill for 20 seconds on each side on an open flame.
Assembly:
- Spoon the beef mixture onto the centre of every tortilla and top with a little cheese, roll and place in an oven safe dish. (save some cheese & sauce for the top).
- Spoon the remaining sauce over the rolled tortillas and sprinkle with the remaining cheese. Bake until the sauce bubbles and the cheese is melted, about 15 minutes.
