At the tender age of 15, Frankie Zarb began working in a butcher shop.

Meat Point provides a full range of highest quality produce ranging from local, to foreign, and organic meat. Our stores can be found dotted around the island, namely in: Santa Lucia, Zabbar, Attard, Burmarrad, Sliema, and Spinola; within Scotts Supermarket. From day one Frankie showed promise through his initiative and deep interest in the trade. He was soon awarded full responsibility of the shop, a position he maintained for over a decade. Following this learning curve, Frankie took a leap and opened his very own butcher shop, earning the nickname ‘Frankie tal-Laham’ amongst his fellow football fans and friends. Frankie’s career choice was born out of a passion for meat handling, and he continued to pursue this path by collaborating with Scotts Supermarket under the brand name Meat Point. Today Meat Point occupies 6 different establishments, providing shoppers with the best quality local and foreign produce. Frankie and his team scavenge the 4 corners of the Earth to bring the highest standard of produce to our shores, using meticulous testing methods and contemporary practices in preparing their stock. The team at Meat Point pride themselves in the care and dedication with which they handle this produce, pouring their heart and soul into all their daily duties; just like young Frankie.

With our chicken breast, this ultimate pizza will taste delicious!

You can top this fun pizza with any toppings you like. Some ideas are: pesto and cherry tomatoes, olives and pepperoni, blue cheese and walnuts. Have fun! 😊

Ingredients:

- 4 chicken breasts (ask your butcher to fillet your chicken breast)
- 100g tomato purée or sliced fresh tomatoes
- 200g mozzarella fresh or for pizza
- 100g salami
- pinch dried oregano

Method:

- Place your filleted chicken breast onto a tray lined with baking parchment and slightly oiled with a little olive oil.
- On each chicken breast, spread tomato purée, mozzarella, salami and a little oregano.
- Preheat oven to 180˚C.
- Bake for 20 minutes, or until chicken is cooked through. It should have an internal temperature of 75˚C.

Bring the Maltese atmosphere at the table with this tasty recipe. You can find fresh homemade chorizo and Maltese sausages at our butcher counters in Scotts Supermarkets in Attard, St. Lucia and Zabbar.



Ingredients:

- 1 fresh chorizo sausage, casing removed, sliced
- 400g Maltese sausage (or 3 sausages)
- 4 small Maltese loafs
- 25ml olive oil
- 2 garlic cloves, thinly sliced
- 1 red and yellow bell peppers, thinly sliced
- 2 spring onions, thinly sliced
- 1 long red chilli, thinly sliced
- 300g chopped tomatoes
- 100g baby spinach leaves
- 4 eggs
- 4 sprigs fresh coriander or basil

Method:

- Preheat oven to 180 °C and line the baking tray with baking paper.
- Carefully cut the tops of the Maltese loafs with a serrated knife and hollow out the inside (keep the inside and make breadcrumbs or arjoli 😊).
- Meanwhile, heat oil in a large fry pan over high heat. Add chorizo and cook, stirring, for 2-3 minutes. Add garlic, bell peppers, spring onion and chilli, and cook, stirring regularly, add the Maltese sausage without its casing and cook for 10 minutes or until slightly browned.
- Add tomatoes, bring to a simmer, then reduce heat to medium and cook for 10 minutes or until sauce thickens slightly.
- Stir in the baby spinach for 1 minute or until just wilted, remove from the heat.
- Using a spoon, fill the hollowed Maltese loafs almost to the top, then carefully crack an egg into each loaf of bread, sprinkle with chopped fresh coriander and place the bread top.
- Cook in the preheated oven for 25 to 30 minutes.

With our fresh homemade sausages, this recipe will amaze your guests.

Ingredients:

- 30ml vegetable oil
- 4 fresh cumberland sausages
- 4 fresh chorizo sausages
- 2 eggs
- 100g plain flour, sifted
- 85ml whole milk
- 85ml beer
- 25g wholegrain mustard

Method:

- Preheat oven to 220 C.
- Heat a frying pan over a medium heat and brown the sausages on all sides.
- Meanwhile, put the eggs in a large bowl and beat, with an electric hand whisk, until thick.
- Beat in the flour and milk until smooth, then stir in the beer and mustard and leave to sit for 15 minutes.
- Pour the oil in a roasting tin (about 26 cm x 21 cm) and put in the oven to heat. Once the sausages are browned all over, and the batter has rested, take it out of the oven and put over a medium flame.
- Pour in any fat from the sausage pan, followed by the batter, which should sizzle as it hits the tin. Add the sausages and return to the oven.(Caution as this will be very hot).
- Bake for about 35 minutes until well risen and golden, then serve immediately, preferably with good gravy and lots of vegetables.

Ingredients:

- 500g minced beef
- 15g baking soda
- 15g salt
- 50ml vegetable oil
- 1 white onion, finely chopped
- 1 jalapeño pepper minced
- 2 cloves garlic, finely chopped
- 15g chilli powder
- 15g ground cumin
- 10g dried oregano
- 50g 00 flour
- 450g tomato (fresh or polpa)
- 1 chicken cube (diluted in 300ml warm of water)
- 60ml vegetable oil
- 10 (6- to 7-inch) tortillas
- 250g shredded cheese of your choice (mild cheddar, monterey jack or jalapeño)

Method:

- In a bowl, combine the beef, baking soda, and salt. Mix with your hands until evenly combined, and let it rest for at least 20 minutes.
- Heat the oil in a large non-stick pan over medium heat. Add the meat and cook, breaking it up with a wooden spoon, until browned (about 5 minutes).
- Add the onion, jalapeño pepper, and garlic to the pan and cook, stirring frequently, until the onion is softened (3 to 4 minutes), reduce the heat.
- Add the chilli powder, cumin, oregano, and flour. Cook, stirring constantly, for 1 minute until flour is combined.
- Add the tomato, then gradually pour in the chicken broth, stirring to combine.
- Bring to a simmer until the sauce is thickened (12 to 15 minutes).
- Taste and adjust the seasoning, if necessary. (The sauce may taste a bit spicy, but the cheese will help milden the chilli flavour)
- Preheat the oven to 200° C.

Soften the tortillas either in the microwave or over the hob.
- Microwave: Using a pastry brush, brush both sides of each tortilla with oil, then stack them on a plate and microwave, uncovered, about 1½ minutes.
- Hob: Using a tong, grill for 20 seconds on each side on an open flame.

Assembly:
- Spoon the beef mixture onto the centre of every tortilla and top with a little cheese, roll and place in an oven safe dish. (save some cheese & sauce for the top).
- Spoon the remaining sauce over the rolled tortillas and sprinkle with the remaining cheese. Bake until the sauce bubbles and the cheese is melted, about 15 minutes.
