September 16, 2024 I finally made the decision to stop leaving my health to chance.

So, I started the Carnivore diet and here I am, officially 65 pounds lighter.

Ima’ keep going cuz 199 is just 21 teeny, tiny, itty, bitty pounds away!

🔹 How to Calculate Net Carbs

Step 1: Look at the nutrition label. Find:
• Total Carbohydrates
• Dietary Fiber
• Sugar Alcohols (if listed)

Step 2: Use this formula:

Net Carbs = Total Carbs – Fiber – Sugar Alcohols (if they don’t affect blood sugar)

⚠️ Note: Not all sugar alcohols are created equal. Some raise blood sugar almost like regular sugar.
• Safe to subtract: Erythritol, Allulose, Monk Fruit (don’t spike blood sugar).
• Partially subtract: Xylitol (about half is absorbed).
• Do NOT subtract: Maltitol, Sorbitol, Mannitol (they raise blood sugar almost like sugar).



🔹 Examples
1. Avocado (medium):

• Total Carbs: 12g
• Fiber: 9g
• Net Carbs = 12 – 9 = 3g

👉 This is why avocado is a keto/carnivore favorite.



2. Low-Carb Protein Bar:

• Total Carbs: 22g
• Fiber: 10g
• Sugar Alcohol (Erythritol): 8g
• Net Carbs = 22 – 10 – 8 = 4g

👉 But if the sugar alcohol were maltitol, you’d only subtract about 4g (half), so it would actually be 8g net carbs.



🔹 Why Net Carbs Matter for Weight Loss
• Your body only reacts to net carbs when it comes to blood sugar and insulin.
• Lowering net carbs helps keep insulin low, which allows your body to switch into fat-burning mode more easily.



💡 Rule of Thumb for Fat Loss & Hunger Control:
• Stick to under 25–30 net carbs per day for strong fat-burning (ketosis).
• Under 50 net carbs per day can still release weight and reduce hunger for many women.

🥓 Carnivore Mac & Cheese with Egg White Noodles

Ingredients
• 2 egg white wraps (Egglife brand or similar)
• 3 tbsp butter (divided)
• ½ cup heavy cream
• 1 cup shredded cheese (cheddar, Gruyère, or Parmesan work great)
• Pinch of salt (to taste)
• Optional toppings: crispy bacon, pork rinds, or extra cheese

Instructions
1. Prep the noodles
• Roll up each egg white wrap and slice into thin strips (like fettuccine).
• Set aside.
2. Cook the “noodles”
• Heat 1 tbsp butter in a skillet over medium heat.
• Add the strips, tossing gently for 1–2 minutes until warmed and slightly softened.
• Remove and set aside.
3. Make the cheese sauce
• In the same skillet, melt 2 tbsp butter.
• Add the heavy cream and bring to a gentle simmer.
• Stir in shredded cheese a handful at a time until melted and smooth.
• Season with salt to taste.
4. Combine
• Return the egg white strips to the pan and toss to coat in the cheese sauce.
• Let simmer 1 minute to thicken.
5. Serve
• Plate it up, and if you want a little crunch, sprinkle crushed pork rinds or crumbled bacon on top.

✨ Rich, creamy, comforting — and still 100% carnivore-approved.
