Ingredients:
2 large ripe bananas
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
Preparation:
In a bowl, mash the bananas. Mix in the egg, then vanilla and cinnamon. Pour pancake batter in ¼ cup amounts on a griddle or skillet over medium-high heat. Cook until bubbles pop on the surface of the pancake, then flip and cook the other side. Enjoy!

Ingredients:
15.5 ounces chickpeas, drained & rinsed
1½ cups oats
½ cup shredded carrots
½ cup diced red onion
1 egg
1 teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
1 teaspoon olive oil
½ lemon, juiced
1 tablespoon olive oil
Preparation:
1. In a food processor, combine the chickpeas, oats, carrots, red onion, egg, salt, pepper, garlic powder, and olive oil. Blend just until combined.
2. Add lemon juice and blend again until well-combined.
3. Scoop the mixture using a ⅓ cup measuring cup and form patty in your hands.
4. Heat a tablespoon of olive oil over medium-high heat. Cook the patty 4-5 minutes on each side, or until golden brown.
5. Assemble with your favorite burger toppings.
6. Enjoy!

Ingredients:
4 medium heirloom tomatoes
3 medium avocados
1 large bunch fresh basil
1 lemon juiced
organic extra virgin olive oil
aged balsamic vinegar optional
sea salt
fresh ground pepper
Instructions:
Cut the avocado and remove pit. Slice into rounds, then remove peel. Lightly toss avocado slices in lemon juice.
Slice tomatoes and salt lightly.
Layer tomato slices, avocado slices and basil leaves. Drizzle with olive oil and balsamic vinegar, if using. Salt and pepper to taste.

INGREDIENTS
For the filling:
1 lb ground chicken
6-8oz button mushrooms, finely minced
1 (8oz) can water chestnuts, drained and minced
2 green onions, sliced
2 tsp fresh ginger, minced
1 clove garlic, minced
1 Tbsp avocado oil

To serve:
Lettuce leaves
Cilantro
INSTRUCTIONS:
Prepare the filling by heating the oil in a medium sauté pan over medium heat. Add chicken and cook until lightly browned and cooked all the way through.
Add mushrooms, water chestnuts, green onions, ginger, and garlic. Cook until fragrant and cooked through. Add additional sauce as desired. Scoop mixture onto lettuce leaves. Top with cilantro, if desired, and your favorite dipping sauce.

Ingredients:
1 green Plantain
1 tablespoon melted coconut oil
sea salt to taste
Directions:
Preheat oven to 375 degrees. Line two large pans with parchment paper and set aside. Cut off the ends of each plantain. Cut a thin vertical slit down each plantain. Peel away the thick outer layer and discard. Cut each plantain into very thin slices. Toss the plantain slices in the melted coconut oil. Place the slices in a single layer on the baking pans and top with sea salt. Bake the plantain slices for 15-20 minutes. Enjoy.

Grilled Peaches with Rosemary and Balsamic Vinegar
Ingredients:
Peaches
Fresh rosemary, chopped
Coconut oil
Balsamic vinegar
Directions:
Cut each peach in half and remove the pits. Brush the cut surfaces lightly with coconut oil. Oil the grates on the grill and pre-heat to medium high. Place peach halves with their cut sides facing down and grill for 5 minutes. Flip peaches over and grill for another 4 minutes. Remove from grill and drizzle with aged balsamic vinegar. Sprinkle with chopped rosemary and serve.
