Quick & Healthy Holiday Meal for Busy Families
The holidays can be hectic, but that doesn’t mean you have to sacrifice a nutritious meal! Here’s an easy, wholesome dish from Dahlia that’s perfect for busy families.
One-Pan Baked Chicken with Veggies
Ingredients:
4 boneless, skinless chicken breasts
2 cups baby carrots
2 cups baby potatoes, halved
1 cup broccoli florets
1 red bell pepper, sliced
3 tbsp olive oil
2 tsp garlic powder
2 tsp dried rosemary or thyme
Salt and pepper to taste
Optional: a squeeze of lemon juice for extra flavor
Instructions:
Preheat your oven to 400°F
In a large mixing bowl, toss the chicken breasts and vegetables with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated.
Spread everything out in a single layer on a large baking sheet.
Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Optional: Squeeze fresh lemon juice over the top before serving.
