I've started the next phase of my journey! I'm eating low-carb/ketoesque (I'm not trying achieve ketosis) and will keep legumes and fruit in my diet. I'm not " on a diet", just switching back to eating in a manner that helps alleviate chronic pain issues... and to lose more weight, which helps with those same issues. This morning: Eggs in an avocado basket with parmesan, cooked in ghee, and some local blueberries on the side.

Made my first cauliflower crust pizza today! Was delicious! My daughter, whose taste is quite discerning, LOVED it! Thanks☺ to my friend Kevin Esquivel for the helpful short cuts😀👍

PSA: Organic grass-fed ground beef, onion, garlic, green enchilada sauce, tortillas, olives and shredded MUENSTER cheese make amazingly yummy enchilada casserole! And since you can pick mild, medium, or hot for the sauce can be kid-friendly, too!

Need a personal chef? Look what I just accomplished in 3 hours! Including cleaning up. Tri-tip with a coffee paprika rub, onion, garlic, and mushrooms in a reduction sauce; salad ready to go, and salad fixings prepped including lemon chicken breast; lentils; and rice.

My son does not like eating fresh fruit or veggies at school (a textural and temperature issue), so these are an excellent way to get fruit and vegetables worked into his lunch.

Hi friends and family! I'll be out and about the next few days selling tickets for the Chicken and Waffle Breakfast Band Camp fundraiser taking place this Saturday.
