My client went from an HbA1C of 5.9 (which is in the prediabetic range) to 5.6 (normal range!) in just 3 months!

As I mention in the post, the BIGGEST food focus she has made is increasing her fiber intake. Naturally this has led to eating more fruits, vegetables, nuts/seeds, legumes and whole grains. All things that many of us could use some more of.

She has also been working on consistency in working out, mostly by going on walks most days and doing strength training a few times a week, which I would say is pretty reasonable.

A lot of my clients struggle with maintaing motivation when they start working on lifestyle changes, and having data like this can be a game changer in keeping the momentum!

I know what it’s like to feel dismissed in the medical system, which is why it’s so important to me to make sure my clients feel heard on their journey to better health. It’s easy to experience strong feelings of imposter syndrome doing this work, so to be honest, it’s so lovely getting feedback like this from clients.

Pizza - but make it healthy 😉

This is an orzo bake mixed with lots of veg - onions, bell peppers, spinach - and cheese and pizza/pasta sauce. Topped with fresh basil and pepperoni of course. For a more protein rich meal, you could use ground beef/chicken/turkey instead! I sadly cant have gluten so instead of orzo I used chickpea pasta for mine! I paired this with a salad to have a veggie-forward meal.

You all know I’m obsessed with the cookbook, which is where you’ll find this recipe. Highly recommend!

BWCA 2025 🤙🏼

First time canoe backpacking - what a freaking adventure! Felt good to totally disconnect for a few days. Lots of laughing, sweating, paddling, hammocking, reading, and portaging heavy s**t. I also somehow got my friends to sing “row row row your boat” in a round, but I’ll spare you the video.

Minnesota continues to amaze me. Forever grateful for life bringing me here 🤍
